New favorite alert! This Slow Cooker Chicken Chili has been on repeat at our house. Chicken, corn, black beans, chili beans, tomatoes, and chili seasoning. So hearty and delicious! I actually prefer this chili to our usual ground beef chili. This is super easy to make and the house smells amazing while it is cooking. Whip up some homemade cornbread and you are set!
How to Make Slow Cooker Chicken Chili
This chili is super easy to make in the crockpot. Place some chicken breasts in the slow cooker. Add black beans, ranch style chili beans, Rotel diced tomatoes and green chiles, diced tomatoes, corn, and chili seasoning. Cover and cook on LOW. Remove the chicken and shred or dice. Return to the crockpot, stir, and enjoy!
- You can use any cut of chicken that you prefer – breasts, tenders, or thighs.
- I used Ranch Style Beans in this chili. They are near the chili beans. If you can’t find them, you can substitute chili beans or pinto beans.
- I used a packet of French’s Chili-O Chili Seasoning.
- Can Chicken Chili be made on the stovetop? Yes! You can make this as directed with raw chicken on the stovetop. Add the ingredients to a large stockpot or Dutch oven. Bring to a boil and simmer until the chicken has cooked. Shred or chop the chicken and serve.
- You can substitute cooked chicken for the chicken breasts for a super quick meal. Add the ingredients to a large stockpot or Dutch oven. Bring to a boil and simmer until the chili starts to thicken.
- If you use already cooked chicken, you may need to add some chicken broth to the chili.
- Can Chicken Chili be frozen? Yes! Let the chili cool completely and transfer to plastic containers or freezer bags and freeze. To reheat, thaw and heat in the microwave, on the stovetop, or in the slow cooker.
What to Serve with Chili

- 2 lb boneless skinless chicken breasts
- 2 (15-oz) cans black beans, drained and rinsed
- 2 (15-oz) cans Ranch Style Beans, undrained
- 2 (15-oz) cans diced tomatoes, undrained
- 1 (10-oz) can Rotel diced tomatoes and green chilies undrained
- 1 (15-oz) can corn, drained
- 1 (2.25-oz) packet chili seasoning
Instructions:
- Place all ingredients in a 6-qt slow cooker. Cover and cook on LOW for 6 to 8 hours.

I noticed the absence of a liquid, do you need any ? I can’t wait to make it.
I did not use any additional liquid. Just the liquid from the vegetables and the chicken as it cooked. Feel free to add some chicken broth if you want a thinner chili.
