Chicken Cornbread Casserole

This Slow Cooker Chicken & Dressing is a family favorite. This is the ultimate comfort food. Chicken slow-cooked in an easy homemade cornbread dressing. The dressing is AMAZING! No stovetop stuffing in here! This dressing is made from scratch! YUM! We enjoy this year-round but we especially love this during the holidays. It is a great alternative to traditional Thanksgiving turkey. Serve this with your favorite side dishes for a stress-free meal!

How to Make Slow Cooker Chicken & Dressing

This casserole is super easy to make. Start with making the cornbread dressing. Crumble up some cooked cornbread. Tear up some day-old white bread. Add chopped onion, chopped celery, sage, thyme, salt, pepper, eggs, chicken broth, cream of chicken, and cream of mushroom soup. Mix well. Stir in rotisserie chicken meat. Transfer the mixture to the slow cooker. Cover and cook on LOW for 4 or 5 hours.

  • You can use any cooked cornbread that you enjoy. Jiffy Mix will work fine.

What to Serve with Chicken & Homemade Dressing

This chicken casserole is a favorite at our house. We like to top this casserole with some gravy. I just use a packet of McCormick’s Turkey Gravy. I know it isn’t fancy, but it is really good! We serve this with green beans or lima beans and some rolls. This is also great with broccoli or asparagus. Whatever you serve it with, it is sure to be a hit.

Ingredients:

  • 1 whole rotisserie chicken meat shredded, skin and bones discarded
  • 10 cups crumbled cornbread
  • 8 slices day old bread, torn into large pieces
  • cups onion
  • 1 cup chopped celery
  • 4 tsp dried sage
  • 2 tsp dried thyme
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 4 large eggs
  • 2 (14.5-oz) can chicken broth
  • 2 (10.75-oz) cans cream of chicken
  • 1 (10.75-oz) can cream of mushroom

Instructions:

  • In a large bowl, combine crumbled cornbread, bread slices, onion, celery, sage, thyme, salt, pepper, eggs, cream of chicken, cream of mushroom, and chicken broth.
  • Stir in chopped rotisserie chicken.
  • Transfer mixture to slow cooker.
  • Cover and cook on LOW for 4 to 5 hours or HIGH for 3 hours.

  1. This is my family’s favorite chicken & dressing recipe!!! The only addition I make is to add chopped boiled eggs to mine. It’s easy! Makes a LOT (hello, leftovers)! It is very portable in the crockpot!
