This Slow Cooker Chicken & Dressing is a family favorite. This is the perfect comfort food. Chicken is slow-cooked in an easy homemade cornbread dressing. The dressing is AMAZING! No stovetop stuffing mix in here! This dressing is made from scratch! YUM! We enjoy this easy slow cooker recipe year-round but we especially love this during the holidays. It is a great alternative to the traditional Thanksgiving dinner. It is equally delicious on Sundays for an easy family dinner.

How to Make Slow Cooker Chicken & Stuffing Casserole

This casserole is super easy to make with simple ingredients. Start with making the cornbread dressing. In a large bowl, crumble up cooked cornbread. Tear up some day-old white bread and it in the bowl. Add finely chopped onion, chopped celery, sage, thyme, salt, pepper, eggs, chicken broth, cream of chicken soup, and cream of mushroom soup to the bread cubes. Mix well. Stir in rotisserie chicken meat. Spray the crock pot liner with cooking spray. Transfer the chicken mixture to a slow cooker. Cover and cook on LOW for 4 or 5 hours. Garnish with fresh parsley.

  • You can use any cooked cornbread that you enjoy. Store-bought, homemade, or cornbread from a mix is all fine.
  • You can use any flavor of condensed cream soup that you prefer: cream of celery soup, cream of chicken soup, and cream of mushroom soup.
  • You can use any cooked chicken you have on hand. Boneless skinless chicken breasts, chicken thighs, chicken tenderloins, or rotisserie chicken all work great.
  • I suggest using low-sodium chicken broth or no-salt chicken broth in this recipe.
  • Have a picky eater? Chop the onion and celery in a food processor. They will disappear in the stuffing mix.
  • Can substitute poultry seasoning for the seasonings in the stuffing recipe.
    • Add your favorite herbs to the dish for extra flavor: rosemary, oregano, garlic powder, or onion powder.

Ingredients:

  • 1 whole rotisserie chicken meat shredded, skin and bones discarded
  • 10 cups crumbled cornbread
  • 8 slices day old bread, torn into large pieces
  • cups onion
  • 1 cup chopped celery
  • 4 tsp dried sage
  • 2 tsp dried thyme
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 4 large eggs
  • 2 (14.5-oz) can chicken broth
  • 2 (10.5-oz) cans Unsalted Cream of Chicken Soup
  • 1 (10.5-oz) can Unsalted Cream of Mushroom Soup

Instructions:

  • In a large bowl, combine crumbled cornbread, bread slices, onion, celery, sage, thyme, salt, pepper, eggs, cream of chicken, cream of mushroom, and chicken broth.
  • Stir in chopped rotisserie chicken.
  • Transfer mixture to slow cooker.
  • Cover and cook on LOW for 4 to 5 hours or HIGH for 3 hours.

  1. This is my family’s favorite chicken & dressing recipe!!! The only addition I make is to add chopped boiled eggs to mine. It’s easy! Makes a LOT (hello, leftovers)! It is very portable in the crockpot!
