Easy Chicken Parmesan Soup with Pasta

This Slow Cooker Chicken Parmesan Soup is a new favorite! It has all of the flavors of chicken parmesan in the form of a soup. I happen to love chicken parmesan, so I loved this soup!! The best part about this whole recipe is that it is super easy to make! Simply dump everything in the slow cooker and let it do all the work. Perfect for busy weeknights! Whip up a simple green salad and some garlic bread and dinner is done!

How to Make Chicken Parmesan Soup in the Slow Cooker

As I said, this soup is SUPER easy to make with only a few simple ingredients. Start with placing a couple of boneless skinless chicken breasts in the slow cooker. Next add a jar of spaghetti sauce, tomato paste, diced tomatoes, chicken broth, garlic, and Italian seasoning. Season with salt and black pepper. Let the soup cook for up to 8 hours. Remove the chicken and shred it with 2 forks. Place the shredded chicken back in the slow cooker along with some pasta and parmesan cheese. Cook for 15 to 20 minutes until the pasta is al dente. Top soup with mozzarella cheese, chopped basil, and extra parmesan cheese.

Ingredients:

  • 2 to 3 boneless skinless chicken breasts
  • 1 Tbsp minced garlic
  • 1 Tbsp dried minced onion flakes
  • 1 Tbsp Italian seasoning
  • 1 (6-oz) can tomato paste
  • 1 (8-oz) can tomato sauce
  • 1 (15-oz) diced tomatoes
  • 2 (14.5-oz) cans chicken broth
  • 1 (24-oz) jar spaghetti sauce
  • ¼ cup grated parmesan cheese
  • 8- oz campanelle pasta, 3 cups uncooked

Instructions:

  • Place all ingredients except pasta in a 6-qt slow cooker. Stir. Cover and cook on LOW for 6 to 8 hours.
  • Remove chicken from slow cooker and shred with 2 forks.
  • Return shredded chicken to slow cooker. Add parmesan cheese and pasta.
  • Cook on HIGH for an additional 15 to 20 minutes, until the pasta is cooked.

Notes:

spaghetti sauce
  • I like to use a jar of Trader Joe’s Roasted Garlic Marinara or a jar of Rao’s Marinara Sauce. Both are delicious and work great in this soup.
  • Feel free to toss in some spinach too. I think frozen or fresh spinach would be delicious!
  • You can use any shape of pasta that you prefer.

  1. I love soup with pasta but with only 2 of us.The pasta is way overcooked after a couple of reheatings. I usually cook the pasta by itself and then add it to the soup just before serving..This way no more mushy pasta.
