How to Make Chicken Parmesan Soup in the Slow Cooker

As I said, this soup is SUPER easy to make with only a few simple ingredients. Start with placing a couple of boneless skinless chicken breasts in the slow cooker. Next add a jar of spaghetti sauce, tomato paste, diced tomatoes, chicken broth, garlic, and Italian seasoning. Season with salt and black pepper. Let the soup cook for up to 8 hours. Remove the chicken and shred it with 2 forks. Place the shredded chicken back in the slow cooker along with some pasta and parmesan cheese. Cook for 15 to 20 minutes until the pasta is al dente. Top soup with mozzarella cheese, chopped basil, and extra parmesan cheese.

Helpful Tips & Frequently Asked Questions

  • My favorite store-bought spaghetti sauces are Trader Joe’s Roasted Garlic Marinara (green label), Rao’s, Carbone, and La Famiglia DelGrosso.
  • What can I add to the soup? Fresh chopped onion, bell peppers or spinach are all great additions.
  • You can use any shape of pasta that you prefer. Penne pasta works great!
  • Add a dash of red pepper flakes for a little kick.
  • Can Chicken Parmesan Soup be made on the stovetop? Sure! Place all the ingredients in a Dutch oven or large pot. Cook over medium-high heat until the chicken has cooked. Chop the chicken and serve.
  • You can substitute cooked chicken for raw chicken if you prefer.
  • A rotisserie chicken works great if making this soup on the stovetop. Dump everything in the pot, bring to a boil, and simmer over medium heat until warm.
  • Store leftovers in an airtight container in the refrigerator.
  • Reheat the soup in the microwave or stovetop.
  • You may need to add some chicken stock to the soup when reheating. The pasta will soak up some of the liquid.
