This beef roast is super easy to make with only a few simple ingredients. In a large skillet, heat oil over medium heat. Place the beef chuck roast in the skillet and sear roast on all sides until it starts to brown. Place the roast in the bottom of the crock pot. Add brown gravy mix, Italian dressing mix, Guinness stout beer, tomato paste, diced potatoes, and carrot chunks. Cover and cook on LOW heat for 8 to 10 hours. Transfer the roast to a cutting board and shred with two forks. Return the shredded beef to the slow cooker and stir. Garnish with fresh parsley.

Ingredients:
- 1 (3 to 4-lb) Chuck roast
- 2 Tbsp olive oil
- 1 (0.87-oz) packet brown gravy mix
- 1 (0.7-oz) packet Italian dressing mix
- 1 (16-oz) can Guinness beer
- 2 Tbsp tomato paste
- 3 carrots, peeled and sliced
- 3 yukon gold potatoes, peel and diced
Instructions:

What a mouth watering recipe! So typical of what the Irish eat on St. Patrick’s day. Very little corned beef eaten in Ireland actually, as it is a British recipe. haha
