Stop what you are doing and add this Slow Cooker Low-Carb Bacon Cheeseburger Soup to your menu. It is AH-MAZ-ING! This soup has been on repeat at our house the past month. We just can’t get enough of the flavors! Ground beef, bacon, cheese, broth, cream cheese, and hamburger seasoning. Even if you aren’t cutting carbs, you will LOVE this soup!
How to Make Slow Cooker Low-Carb Bacon Cheeseburger Soup
This soup is super easy to make. Start with browning some ground beef and cooking some bacon. Add the cooked meat to the crockpot. Add beef broth, Rotel diced tomatoes and green chiles, hamburger seasoning, cream cheese, cheddar cheese, and ranch dressing mix. Cover and cook on LOW.
- You can substitute ground turkey and turkey bacon for the ground beef and regular bacon.
- Can use precooked bacon for the cooked bacon. You will need 1 cup for this recipe.
- If there are clumps of cream cheese in the soup, use a whisk to help incorporate the cream cheese into the soup.
- I find Philadelphia brand cream cheese melts best in this soup.
- If you are sensitive to the ranch dressing mix, adjust it to your personal preference.
- Here is our recipe for Homemade Ranch Dressing Mix: https://www.plainchicken.com/homemade-ranch-dressing-mix/
- I used McCormick Grill Mates Hamburger Seasoning. It makes the soup taste just like a hamburger! If you can’t find the Grill Mates, look for Weber Gourmet Burger Seasoning. It also has zero carbs.
- Is Bacon Cheeseburger Soup spicy? We did not think this soup was spicy. If you are worried about the heat make sure to use MILD Rotel diced tomatoes.
- Can Low-Carb Bacon Cheeseburger Soup be frozen? Yes! You can freeze the leftovers. Let the soup cool completely. Place the soup in plastic containers or freezer bags and freeze. Reheat on the stove or in the microwave.
What to Serve with Soup
As I said, we absolutely LOVED this soup. I have it on the menu again this weekend. We just can’t seem to get enough of it. We like to top the soup with some extra cheese, sour cream or some pickles. Whip up a salad and some keto biscuits and you are set!

I have made this at least 7 times in just a few weeks. It is amazing and freezes we!l for quick lunches. We love this recipe!
Could a cup of heavy shipping cream be added to thicken the soup?
I haven’t tried that, so I can not say if it would thicken the soup or not. I usually make a cornstarch slurry if I want to thicken soups. 1 Tbsp cornstarch to 2 Tbsp water.
Yummy! We didn’t have any regular cream cheese in the store so I used vegetable harvest and it was fantastic.
I bet that was tasty!
I saw it serves 10 but what is the serving size? Cup? 8oz? 12oz?
I didn’t measure it
Can I cook on high and how long?
This was excellent! I made this yesterday for dinner and served it with dinner rolls. The only thing I didn’t have was the hamburger seasoning, I had the McCormick steak seasoning though. It still made the soup taste like a burger! It was so good, even my soup-picky husband oohed and ahhed over it. We are keeping this one in the rotation.
HELP—I’m a little confused regarding the bacon. Your recipe calls for 1 pound of bacon, then you say: Can use precooked bacon for the cooked bacon. You will need 1 cup for this recipe. If I cooked one pound of bacon (isn’t that the entire package) that would only equate to 1 cup. Maybe I’m misreading this.
that is correct
My family loved this! I doubled it. I cooked this on the stove top , tossed it all together in a big pot, brought to a boil and simmered for 35 min. Stirring occasionally. Done! ..We chose to serve it over cauliflower rice. It was delicious! Served 8 adults and a toddler ( wasn’t hot) with plenty to have for work lunches the next day! A definite keeper.
Do you think it would still be good without the ranch dressing mix?
Yes, my hubby doesn’t like ranch, we left it out, was amazing! Served with dinner rolls.
Everyone in my house liked this, which almost never happens. It was a bit greasy, so I’m not sure I drained the beef and bacon well enough.
But yes, very easy to make and quite good.
I think it may be from the cheddar cheese. I drained mine too and it was still a tad greasy. Still very good though!
This soup is delicious!! My whole family loved it! I didn’t have any hamburger seasoning so I found a recipe online & made some myself, worked perfectly!
Looks Awesome! Can’t wait to try it! Do you drain the Rotel?
no
Can I substitute the rotel with something else? Dont like tomatoes
You can leave them out
I’ve used the McCormick Grill Mates Hamburger seasoning for a long time and love it! I use it anytime I cook hamburger, to season before I do anything else to it. But it’s gone! None of my stores carry it anymore…are you still able to find it??
I just bought some at Walmart. I hope it isn’t discontinued!
Hi Steph. I just went to 3 different stores, including Walmart looking for it with no luck. Looked online and looks like its not available anywhere. Do you think Montreal seasoning would be a good substitute?
Thanks.
Montreal Steak Seasoning does have some carbs in it. Weber has a burger seasoning with zero carbs.
Blackstone has a GREAT Whisky Burger Seasoning w/ 0 ZERO carbs!
I used a Weber brand of hamburger seasoning and it was delicious! I think it’s pretty close to the McCormick one.
I found the McCormick Hamburger seasoning at Publix yesterday! Excited to try this out, we’re having tonight!
Enjoy! It is soooooo good!
