Happy New Year!! I don’t know about you, but I might have overindulged during the holidays. I am using the new year as my reset button. We are going to incorporate some Keto/Low-Carb recipes into our diet. This Slow Cooker Low-Carb Crack Chicken Soup is at the top of our list. This soup is SO good – you’ll never miss the carbs! How to Make Low Carb Crack Chicken Soup in the Crockpot
This Slow Cooker Low-Carb Crack Chicken Soup is super easy to make. Place a couple of chicken breasts in the slow cooker. Add chicken broth, cream cheese, ranch dressing mix, and bacon. Let that cook for several hours. Once the chicken is cooked, remove it from the slow cooker and shred it with two forks. Place the shredded chicken back in the slow cooker and add cheddar cheese. Let the soup cook until the cheese has melted and serve.
If you are in a hurry, you can make this soup on the stovetop. Use a whole rotisserie chicken instead of chicken breasts. Place everything except the cheddar cheese in a Dutch oven, bring to a boil and simmer for 20 minutes. Stir in the cheddar cheese and cook until melted.
