  1. I LOVE this soup! I reduced the hot sauce, as my family prefers a milder flavor. I didn’t have low sodium chicken broth, so I diluted chicken stock with water and it was perfect! (3 cups chicken stock and 1 cup water) Costco has really good “smallish” smoked hams, which I diced for this recipe and sliced the rest for meals this week.

  2. I’ve got it in the crockpot as I’m typing this. Just a quick question…do you need to use an immersion blender to smooth it out? The picture looks smooth, but how does that happen? Thanks!

    1. It just happens as the hash browns cook. The soup gets smooth as your stir it when the cheese goes in.

  3. Made the soup today for lunch. Instead of sour cream I used Greek yogurt. Worked out great. Hubby ate two bowls so it’s a winner.
