I LOVE this soup! I reduced the hot sauce, as my family prefers a milder flavor. I didn’t have low sodium chicken broth, so I diluted chicken stock with water and it was perfect! (3 cups chicken stock and 1 cup water) Costco has really good “smallish” smoked hams, which I diced for this recipe and sliced the rest for meals this week.
Thanks for the tip on the smoked ham at Costco!
Accidentally added all ingredients right from the start. Will this hurt anything?
It will be fine.
We don’t have frozen shredded hash browns here but can we use fresh shredded hash browns?
I’ve got it in the crockpot as I’m typing this. Just a quick question…do you need to use an immersion blender to smooth it out? The picture looks smooth, but how does that happen? Thanks!
It just happens as the hash browns cook. The soup gets smooth as your stir it when the cheese goes in.
Will the cream cheese curdle ?
mine doesn’t
I have the frozen hash brown’s in my freezer…now I know how I’ll be using them! This sounds SOOOOO good!
Made the soup today for lunch. Instead of sour cream I used Greek yogurt. Worked out great. Hubby ate two bowls so it’s a winner.
