Slow Cooker 3-Meat Chili Recipe

This Spicy Touchdown Chili is our go-to chili recipe. It is super simple to make and tastes great! There are three types of meat in this chili – ground beef, pork sausage, and bacon. There is also a kick to the chili from Rotel diced tomatoes and green chiles and cayenne pepper. This makes a lot of chili. It is perfect for when you need to feed a crowd! I actually have this on the menu for our tailgate this weekend! I can not wait!

How to Make Spicy Touchdown Chili

This chili is very simple to make. Start with browning ground beef and pork sausage in a skillet. Drain the fat and place it in the slow cooker. Add chopped cooked bacon, chili beans, black beans, Rotel diced tomatoes and green chiles, beef broth or beer, onions, chili powder, cumin, garlic, basil, and cayenne pepper.

  • I used a roll of Jimmy Dean sausage for the pork sausage in the recipe.
  • I used precooked bacon in this recipe. If you are cooking your own bacon, you will need about ¾ of a pound.
  • Can substitute ground turkey, turkey sausage, and turkey bacon.
  • Can use beef broth or a can of beer for the liquid in the chili.
  • Is Spicy Touchdown Chili spicy? Yes! There is definitely a kick to this chili. If you are worried about the heat, use MILD Rotel diced tomatoes and green chiles and adjust the cayenne pepper to your personal preference.
  • Can chili be frozen? Yes! This makes a lot of chili. You can freeze the leftovers for a quick meal later.
  • Can I make this chili on the stovetop? Yes! Brown the meat, add the remaining ingredients, bring to a boil and simmer for 20 to 30 minutes.

What to Serve with Chili

We love to serve our chili topped with some sour cream, jalapeños, cheese, and Fritos. I also make a big pan of homemade cornbread to go with the chili. We always have cornbread with our chili! This is also great served over some rice or spaghetti noodles. However you serve it, just serve it! It is crazy good!

Ingredients:

  • 1 lb ground beef
  • 1 lb pork sausage
  • ¾ cup chopped cooked bacon
  • 2 (15-oz) cans chili beans, undrained
  • 1 (15-oz) can black beans, drained and rinsed
  • 3 (10-oz) cans Rotel diced tomatoes and green chiles
  • cups beef broth or beer
  • 3 Tbsp dried minced onion flakes
  • ¼ cup chili powder
  • 2 tsp cumin
  • ½ tsp garlic powder
  • 1 tsp dried basil
  • ¾ tsp cayenne pepper or to taste

Instructions:

  • In a large skillet, cook ground beef and pork sausage over medium heat until no longer pink. Drain fat.
  • Add meat to the slow cooker. Stir in the remaining ingredients.
  • Cover and cook on LOW for 5 to 6 hours.
