Easy Mexican Shredded Beef Recipe

This Slow Cooker Taco Pot Roast is CRAZY good! We have made this several times over the past few months and just love it. Pot roast simmered all day in taco seasoning, au jus gravy mix, Rotel tomatoes, and tomato juice. SO good! Serve the shredded meat with warm tortillas and your favorite taco toppings. YUM! This has quickly become one of our favorite beef taco recipes. One bite and you will know why!

 The most popular cut to use is a Chuck roast. You can also use brisket or round roast.

How to Make Taco Pot Roast

These crockpot beef tacos are effortless to make with only a few simple ingredients. Place a beef chuck roast in the slow cooker. In a small bowl, whisk together tomato juice, taco seasoning, au jus gravy mix, and Rotel diced tomatoes and green chiles. Pour the tomato mixture over the roast. Cover and cook on low heat for 8 to 12 hours, until fork tender. Remove the roast from the slow cooker and shred meat with two forks. Discard any fat. Return the shredded meat to the slow cooker and enjoy.

  • Do I need to pan-sear the meat before adding it to the slow cooker? Searing or browning the meat is not necessary. To brown the roast, heat a few tablespoons of olive oil or canola oil in a large skillet over medium-high heat. Sear on all sides of the beef roast in the hot pan for a few minutes. Place meat in the crock pot. Use a little beef broth to deglaze the skillet and scrape up the brown bits from the pan and add to the slow cooker. Those browned bits are flavor gold!
  • Does pot roast get more tender the longer it cooks? Yes! Chuck roast, brisket, or round roast all contain connective tissues that will slowly break down into rich collagen as they cook in the crockpot. Collagen takes time to break down. Using the slow cooking method to cook pot roast results in a tender, melt-in-your-mouth, fall-apart beef.

  • 1 (4-lb) beef chuck roast
  • 1 (1.25-oz) package Au Jus Gravy Mix
  • 1 (1-oz) package Taco Seasoning
  • 1 (10-oz) can Rotel diced tomatoes & green chiles undrained
  • cups tomato juice

Instructions:

  • Place pot roast in slow cooker. Whisk together remaining ingredients and pour over pot roast.
