Slow Cooker Vegetable Medley
This Slow Cooker Vegetable Medley is ridiculously good. The best part is they cook all day in the slow cooker. There is really no work on your part. Just slice the veggies and throw in the slow cooker with a little bit of seasoning and let the slow cooker do the work!
These veggies are great as a side dish or served over pasta. The veggies cook down and make a crazy good broth. It was incredible served over pasta! Throw some grilled chicken or steak on top of the veggies and pasta – amazing!

Slow Cooker Vegetable Medley
ingredients:

1 onion, chopped
-
1 bell pepper, chopped
-
1 zucchini, chopped
-
2 (14.5oz) cans diced tomatoes with basil
-
2 cups sliced mushrooms
-
¼ tsp garlic powder
-
½ tsp dried oregano
-
⅛ tsp pepper
instructions:
- Place all ingredients in slow cooker. Cover and cook on LOW for 6 to 8 hours, until vegetables are soft.
So I whipped a similar side dish up last night in a skillet. Started with onions in olive oil (Add oil as needed). Then added zucchini & yellow squash & browned them up a little. Lowered heat a some & added teaspoon of dry herb mix to bloom their essence plus S&P. Next addition was some canned Italian seasoned diced tomatoes,
drained . Didn't want this to be soupy. Finally some fresh basil & Romano cheese topped it off. Gosh darn, I forgot to add Mushrooms. My husband ate his and finished
off the cup of leftovers. Quick, easy and yummy. ????
I love this mix for adding to whatever we are having for dinner! The fact that it cooks in the slow cooker is a MAJOR bonus!!
