Smothered Asparagus
Ingredients:
- 4 bunches fresh asparagus trimmed
- 1 lb bacon
- ⅔ cup brown sugar
- ¼ cup butter, melted
- ¼ cup low-sodium soy sauce
- 1½ tsp garlic powder
Instructions:
- Preheat oven to 350ºF.
- Cut asparagus into 1-inch pieces and place in a 9×13-inch pan.
- In a large skillet, cook bacon until almost done but not too crispy.
- Remove from skillet, drain on paper towel and chop. Sprinkle cooked bacon on top of asparagus.
- Whisk together brown sugar, melted butter, soy sauce and garlic powder. Pour over asparagus.
- Bake uncovered for 40 minutes.

How can this recipe be converted for pressure cooker???
No idea – I’ve only made it as written. With the time for the pressure to build up and release, my guess is that you wouldn’t be saving any time.
Using fresh asparagus from the garden and not familiar with how much is in a ‘bunch’. Can you help?

100% agree with Colette. My husband is diabetic and I use Swerve products for replacements. If you’ve never used it before, Swerve brown sugar has the same consistency, texture and taste of regular brown sugar.

Can I use canned asparagus?
I guess, if that is what you prefer. I would say that you would need about 5 cans. As always, please use your best judgment regarding substitutions and modifications.

This good recipe wants that bacon fat drained right into the casserole.
What I could replace the soy sauce with? Food allergy to soy in our family!
Use Tamari. Same as soy sauce but it is rice based rather than soybean. Really pleasant taste.
Tamari is 100% soybeans. It does not contain wheat like regular soy sauce.
Coconut aminos is a great soy sauce substitute.
Is there a bacon substitute? Love it but it doesn’t love my tummy! 😭😭
A couple of questions…Is this a sweet dish or does the bacon and soy sauce cover up the sweetness from the brown sugar? Can you make this dish the day before? And I'm guessing if you halve the recipe, the bake time should also be adjusted? Thanks!
