This was super easy to make. It literally took 5 minutes to assemble and it was ready for the oven. Whip up some green beans and biscuits while the Smothered Chicken and Rice is baking and dinner will be on the table in about 30 minutes. You seriously can’t beat that!

This casserole uses 2 cups of cooked rice. You can make the rice ahead of time and refrigerate it until you are ready to bake this casserole. Use your favorite rice – minute rice, long-grain rice, brown rice, a pre-made bag of rice. Just make sure to use one that you and your family enjoy!!

Instructions:

  • Preheat oven to 375ºF. Lightly spray a 9×13-inch pan with cooking spray.
  • Spread cooked rice in bottom of prepared pan. Top with chicken tenders. Sprinkle chicken with seasoned salt.
  • Mix together cream of chicken soup and milk. Pour over chicken.
  • Bake uncovered for 25 minutes. Remove from oven and top chicken with shredded cheeses. Sprinkle cooked bacon on top of the cheese. Return to oven and bake an additional 5 to 10 minutes, until the cheese is melted and the chicken has reached an internal temperature of 165ºF.

  1. This was great! I seasoned the rice with salt & pepper and a little Cajun seasoning, cut two large chicken breast into strips. Poured soup mixed with milk over just as it said. I cooked it an extra 5 min to make sure chicken was done. Otherwise did it exactly like the recipe. It was perfect and delicious!

  2. I made this for myself and my mom. We both loved it. I think next time I’ll add some chicken broth to the rice while it’s cooking as I thought the rice was a little plain but overall it was delicious and simple.

  4. I just finished making this. I used a bag of frozen pulled chicken that I defrosted the day before. I mixed all ingredients together instead of layering and added broccoli, onion and garlic powder, salt and pepper.

  5. Made this last night and it was so good! I marinated breast in some broth and garlic for a few hours. Then cut them up and simmered them in the broth til cooked. Doubled the recipe but forgot the bacon. Still delish! Like a risotto. Also added steamed broccoli. Only note would be to stir it all together rather than layering. The sauce didn’t go all the way through and the rice stuck to the pan. I stirred it up and put it back in with the additional cheese on top. Yum!!

  6. I just made this – but made a few additions to the recipe. It turned out fantastic, so I thought I would post. I stirred in a can of chopped green chilis to the rice mixture. I included some sliced green onions when I added the cheese and bacon to the top. This gave a little southwest flavor to the dish that my family really enjoyed!

  7. Can I use Basamati Rice? And also if the rice is already cooked and then it goes in the oven to bake, doesn’t that overcook the rice?

      1. Yes I made this recipe. I added breasts instead of tenders . My family loves it and wants it more often now. I’m so glad I found yer recipe I was getting burned out always eating same food…. I’ve ran outta ideas already and then came you…. I can’t wait to get more of yer recipe ideas…..I know my family sure can’t wait lol

  8. My crew really enjoyed this. I used cut up chicken breasts, added some Italian seasoning and Mrs. Dash’s Garlic & Herb seasoning to the chicken mixture. My husband said the leftovers were even great on day 2 ( I made 2 recipes, each in a seperate 13 x 9)

    1. I made this for dinner tonite and my kids loved it!!! Will Def be making it again but will be tweaking seasonings and also the mixture that goes over the chicken because it wasn’t as smothered as I’d like it to be!!! All in all it was delicious tho!!
