Easy Ground Beef & Egg Noodle Casserole

I found this recipe on allrecipes.com and thought it sounded like a good way to use up the extra egg noodles I had from the Cheesy Chicken Casserole. It didn’t take long to make, and it tasted delicious. It was creamy, cheesy, and all-around yummy! Chicken Legs especially loved this. He has requested it again next week.  I thought it tasted like a cross between lasagna and the Spasagna I made a while back. Either way, we both really enjoyed this.

How to Make Sour Cream Noodle Bake

This casserole is super easy to make. Start with cooking the egg noodles. While the noodles cook, brown some ground beef. Add pepper, garlic salt, and tomato sauce. Mix together the cooked noodles with cottage cheese and sour cream. Spread the noodles in a baking dish. Top with the meat sauce and shredded cheddar cheese. Pop it in the oven and bake.

  • Can I make Sour Cream Noodle Bake in advance? Yes! You can assemble the casserole ahead of time and refrigerate until ready to bake.
  • Can I freeze Sour Cream Noodle Casserole? Yes! You can assemble the casserole and freeze for later. To bake the casserole after freezing, thaw completely and bake as directed below.
  • You can substitute ground turkey for the ground beef.
  • Feel free to add onion and bell pepper to the meat sauce.
  • What can I substitute for cottage cheese? This dish is wonderful with cottage cheese. I urge you to try it. If you just can’t do it, you can try substituting ricotta cheese.
  • Can use any cheese you prefer – Mexican cheese blend, Italian cheese blend, Pepper Jack, Monterey Jack, Colby.
  • You can double the recipe for a crowd and bake in a 9×13-inch baking dish. The cooking time will stay the same.

  1. I love your blog, too! LOVE LOVE LOVE your recipes. Just made six of them (w/few modifications for my brother and sister in law, no dairy, to beef) they were FANTASTIC!!!!Thank you so much! Please keep up the great blog. P.s. no problems here either.

  2. Very good recipe. The only things I changed was to double the tomato sauce, add onion and 1 tsp. of sugar. Will be making this again!!

  3. This was SO good! Was in a bind to use some ingredients in my fridge and this was just the recipe I needed. My 1 year old LOVED it! Thanks for always coming through with great recipes!

  4. Sherry – I don't like cold cottage cheese either, but it is great baked in dishes. If you don't like the curds, you can blend it in the food processor.

If you still don't want to give it a try, you can substitute ricotta or double the sour cream.

  5. Okay… I'm reporting in! I made it today for lunch for my kiddos! And I quote: "MOM! FINALLY you made something we like!" lol I make good stuff all the time, of COURSE, but this really appealed to their kid palates. 🙂

  6. Made this yesterday. I thought it was good. It is similar to my mom's Hamburger Noodle Bake recipe which I think I like better because while eating this dish, I was missing the scallions and the cream cheese that is in my mom's recipe:

    HAMBURGER NOODLE BAKE

    1 pound hamburger
1 clove garlic (or garlic salt to taste)
    1 teaspoon salt
    1/4 teaspoon pepper
    1 teaspoon sugar
2 (8 oz) cans of tomato sauce
    1 cup sour cream
1 (3 oz) package of cream cheese
    4 to 6 scallions
1 (8 oz) package of egg noodle
    1/2 cup grated cheddar cheese

Fry hamburger till brown; drain fat. Chop garlic until fine and mix with salt, pepper, sugar, and tomato sauce. Add to meat; cover and cook slowly 15-20 min. In a bowl mix the sour cream, cream cheese, and chopped scallions. Cook noodles according to package; drain. Mix everything together and pour in the dish; sprinkle over the cheddar cheese. Bake for 20 min in preheated oven at 350. (Instead of mixing everything together, you can also layer. Noodles, cream cheese mixture, meat sauces; and repeat.)

  7. Another amazing dish. This was today's dinner. My family raved over it and seconds were issued out as well. Hopes theres some left for the hubby:)

  8. THANK YOU for this! My boyfriend is a huge pasta fan, so this went over really well with him. He said it may very well be his favourite thing that I make. I put green peppers and onions into the meat sauce too, which gave us some veggies and crunch! DELISH. love it, will make again, many times. Can so easily be made vegetarian, too!

  9. This is one of my favorite recipes! I make it with ground turkey & light sour cream & cottage cheese to make it low-cal! I also use the basil, garlic & oregano tomato sauce, and use 2 cans rather than one! We like it a little saucy. We call it our low-fat lasagna! It satisfies that craving, while keeping your calories in check! 🙂

  10. I made this tonight and it was HUGE hit with my whole family! My husband and I, 2 teenage daughters and 9 year old son. Thank you!

  11. I make something like this. I use cream cheese instead of cottage cheese and it is amazing. Use a block of cream cheese and 8 oz of sour cream. Sometimes I use a little more sour cream but still amazing!

  12. Walkerfam00 – I am so glad to hear this!! This is exactly why I started the blog. I was tired of eating the same thing all the time and needed some variety.

    You made my day!

I used to get so tired of cooking the same things over and over– your blog has remedied that for me! Thanks for all the great recipes!

  22. this looks delicious! I love your recipes.

Just an FYI, not sure if this happens to anyone else. Any time I open your page, it loads for a minute then skips to some virus download thing. And any time I pin something from your site, pinterest claims the site looks like a virus. It's done this on 2 computers for me. Again, not sure if anyone else has had it happen.

  23. This looks so good! One question, do you think there's a way to make it without cottage cheese?
