Easy Ground Beef & Egg Noodle Casserole
I found this recipe on allrecipes.com and thought it sounded like a good way to use up the extra egg noodles I had from the Cheesy Chicken Casserole. It didn’t take long to make, and it tasted delicious. It was creamy, cheesy, and all-around yummy! Chicken Legs especially loved this. He has requested it again next week. I thought it tasted like a cross between lasagna and the Spasagna I made a while back. Either way, we both really enjoyed this.
How to Make Sour Cream Noodle Bake
This casserole is super easy to make. Start with cooking the egg noodles. While the noodles cook, brown some ground beef. Add pepper, garlic salt, and tomato sauce. Mix together the cooked noodles with cottage cheese and sour cream. Spread the noodles in a baking dish. Top with the meat sauce and shredded cheddar cheese. Pop it in the oven and bake.
- Can I make Sour Cream Noodle Bake in advance? Yes! You can assemble the casserole ahead of time and refrigerate until ready to bake.
- Can I freeze Sour Cream Noodle Casserole? Yes! You can assemble the casserole and freeze for later. To bake the casserole after freezing, thaw completely and bake as directed below.
- You can substitute ground turkey for the ground beef.
- Feel free to add onion and bell pepper to the meat sauce.
- What can I substitute for cottage cheese? This dish is wonderful with cottage cheese. I urge you to try it. If you just can’t do it, you can try substituting ricotta cheese.
- Can use any cheese you prefer – Mexican cheese blend, Italian cheese blend, Pepper Jack, Monterey Jack, Colby.
- You can double the recipe for a crowd and bake in a 9×13-inch baking dish. The cooking time will stay the same.

Sour Cream Noodle Bake
Ingredients:
- 1 (8-oz) package wide egg noodles
- 1 pound lean ground beef
- ⅛ tsp ground black pepper
- ½ tsp garlic salt
- 1 (8-oz) can tomato sauce
- 1 cup cottage cheese
- 1 cup sour cream
- 1 cup shredded sharp cheddar cheese
Instructions:
- Preheat oven to 350ºF.
- Cook noodles according to package directions. Drain and set aside.
- Brown meat; drain off fat and return to skillet. Add pepper, garlic salt and tomato sauce. Stir and simmer for 5 minutes.
- Mix together cottage cheese, sour cream, and noodles.
- Lightly spray a 9×9 casserole dish with cooking spray. Spread noodle mixture in bottom of pan. Top noodles with meat sauce. Sprinkle cheese on top of casserole and bake for 20-25 minutes.

Kristen – I think this would freeze fine. Just bake it covered for about 15-20 minutes and then uncover it and bake an additional 20-25 minutes.

Just an FYI, not sure if this happens to anyone else. Any time I open your page, it loads for a minute then skips to some virus download thing. And any time I pin something from your site, pinterest claims the site looks like a virus. It's done this on 2 computers for me. Again, not sure if anyone else has had it happen.
