I found this recipe on allrecipes.com and thought it sounded like a good way to use up the extra egg noodles I had from the Cheesy Chicken Casserole.  It didn’t take long to make, and it tasted delicious.  It was creamy, cheesy and all around yummy!  Chicken Legs especially loved this.  He has requested it again next week.  I thought it tasted like a cross between lasagana and the Spasagna I made a while back.  Either way, we both really enjoyed this.

Yield: serves 4 to 6

Sour Cream Noodle Bake

prep time: 10 MINScook time: 20 MINStotal time: 30 mins

ingredients:

  • 1 (8 ounce) package wide egg noodles
  • 1 pound lean ground beef
  • 1/8 tsp ground black pepper
  • 1/2 tsp garlic salt
  • 1 (8-oz) can tomato sauce
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1 cup shredded sharp cheddar cheese

instructions:

  1. Preheat oven to 350ºF.
  2. Cook noodles according to package directions.  Drain and set aside.
  3. Brown meat; drain off fat and return to skillet.  Add pepper, garlic salt and tomato sauce. Stir and simmer for 5 minutes.
  4. Mix together cottage cheese, sour cream, and noodles.
  5. Lightly spray a 9×9 casserole dish with cooking spray.  Spread noodle mixture in bottom of pan.  Top noodles with meat sauce.  Sprinkle cheese on top of casserole and bake for 20-25 minutes.

  1. Made this yesterday. I thought it was good. It is similar to my mom's Hamburger Noodle Bake recipe which I think I like better because while eating this dish, I was missing the scallions and the cream cheese that is in my mom's recipe:

    HAMBURGER NOODLE BAKE

    1 pound hamburger
    1 clove garlic (or garlic salt to taste)
    1 teaspoon salt
    1/4 teaspoon pepper
    1 teaspoon sugar
    2 (8 oz) cans of tomato sauce
    1 cup sour cream
    1 (3 oz) package of cream cheese
    4 to 6 scallions
    1 (8 oz) package of egg noodle
    1/2 cup grated cheddar cheese

    Fry hamburger till brown; drain fat. Chop garlic until fine and mix with salt, pepper, sugar, and tomato sauce. Add to meat; cover and cook slowly 15-20 min. In a bowl mix the sour cream, cream cheese, and chopped scallions. Cook noodles according to package; drain. Mix everything together and pour in the dish; sprinkle over the cheddar cheese. Bake for 20 min in preheated oven at 350. (Instead of mixing everything together, you can also layer. Noodles, cream cheese mixture, meat sauces; and repeat.)

I put green peppers and onions into the meat sauce too, which gave us some veggies and crunch! DELISH. love it, will make again, many times. Can so easily be made vegetarian, too!

  4. This is one of my favorite recipes! I make it with ground turkey & light sour cream & cottage cheese to make it low-cal! I also use the basil, garlic & oregano tomato sauce, and use 2 cans rather than one! We like it a little saucy. We call it our low-fat lasagna! It satisfies that craving, while keeping your calories in check! 🙂

  6. I make something like this. I use cream cheese instead of cottage cheese and it is amazing. Use a block of cream cheese and 8 oz of sour cream. Sometimes I use a little more sour cream but still amazing!
