Southern-Style Turkey, Tomato & Monterey Jack Bake

This is another recipe from our Deen Bros. Take It Easy cookbook. I was really excited about trying this recipe – it looked so good in the cookbook. It was really easy to make. Chicken Legs browned the turkey earlier in the week, so it only took a few minutes to throw together. Chicken Legs LOVED this. He loves turkey and this was a great combination of flavors. I loved the crunchy topping. This is very similar to a Frito Pie (it’s a Southern thing). It’s another winner from those cute Deen Boys.

Southern-Style Turkey, Tomato & Monterey Jack Bake

2 Tbsp vegetable oil
1 pound ground turkey
2 Tbsp minced onion
1 (10 ¾ oz) can condensed Fiesta Nacho Cheese soup
1 cup canned diced tomato (or salsa)
1 cup frozen corn kernels, thawed
2 cups grated Monterey Jack cheese
2 cusp crushed corn chips

Preheat oven to 400. Heat the vegetable oil in a medium ovenproof skillet over medium-high heat. And the turkey and onion and cook, stirring frequently, until no longer pink. Add the soup, tomatoes (salsa) and corn and bring to a boil. Cook, stirring frequently, for 5 minutes.

Remove the skillet from the the heat and top the turkey mixture with the Monterey Jack cheese and corn chips. Transfer to the oven and bake for 10 minutes, or until the cheese is melted and the casserole is bubbly. Serve immediately.
