Southwestern Chicken Roll Ups – crescent rolls stuffed with chicken, cream cheese and taco seasoning topped with a mixture of chicken soup, salsa and cheese. CRAZY good! We make these once a month. Everyone loves this easy Mexican casserole! Ready in 30 minutes!
This is a variation on one of my all-time favorite dishes – Chicken Roll Ups. I used some taco seasoning in the chicken filling and substituted salsa for the milk in the soup mixture. YUM! I could have eaten the whole pan of this stuff. It was that good.
The filling could be made ahead of time and just assemble the casserole when you are ready. If you want to freeze this dish, you will need to bake it and then reheat it. The crescent rolls won’t rise as well once they have been frozen. I served the chicken roll ups with some taco rice and black beans. This will definitely be in our usual dinner rotation!
Southwestern Chicken Roll Ups
ingredients:

2 cups chicken

4 oz cream cheese, softened

2 Tbsp taco seasoning

1 (10.75-oz) can cream of chicken soup

½ cup salsa

1 cup shredded cheddar cheese, divided
- 1 can refrigerated crescent rolls
instructions:

Preheat oven to 375ºF. Spray a 9×13 dish with cooking spray.

Mix together salsa, cheese and chicken soup.

For the filling, mix together the cream cheese, taco seasoning, chopped chicken and remaining cheddar cheese. Unroll the crescent rolls. Place 2 heaping tablespoons of the chicken mixture on top of each crescent roll and roll up. Place in prepared dish. Repeat with remaining crescent rolls.
- Pour soup mixture over crescent rolls. Bake for 30-40 minutes, until rolls are cooked and golden brown.
This might sound stupid but do you need to add the liquid to the soup thats directed on the can or do you not?
How is the cheese supposed to be divided between the sauce and chicken mixture? Thanks!

Christine – the chicken should be cooked and chopped before adding to the rollups.
Should the chicken be already cooked and cut up or do we use raw chicken and cut that up?
