This is not your ordinary chicken salad. It is packed full of great southwestern flavors. It has corn, peppers, tomatoes, lime juice, taco seasoning and cilantro. It is out of this world delicious! Chicken Legs said this was better than restaurant quality. He said I should open a restaurant and sell this.

This is a great recipe to use up any leftover cooked chicken. I actually like to use rotisserie chicken in this recipe. It is quick and tastes great. I’ve made this several times and it is always well received. I like to serve it on mini croissant rolls, but it is also good on crackers. This is great for a party because it can be made in advance and stored in the refrigerator. Make a batch for tailgating this weekend. I promise, this chicken salad is not to be missed!

  1. This looks wonderful. I have just been asked to host a luncheon for about 135 people. How much would one batch make if I use mini rolls and crackers for the GF segment?

  2. silly question – wanted to make this for potluck at work this weekend. how much is the lime juice? 1 small lime? 1 teaspoon? 1 tablespoon? thanks again!

  3. Made this a couple of days ago. I didn't have any corn so I had to leave it out. Regardless, it was so GOOD! I couldn't quit eating it. I will definitely be making it again. Thanks for the great recipe!
