Southwestern Green Beans
I was looking for a side dish to serve with all the yummy Mexican casseroles we make. I didn’t want our standard black beans, so I decided to whip up some quick Southwestern Green Beans. I tossed the green beans in some olive oil, southwestern seasoning and added a can of Mexican Rotel tomatoes. I used the Mexican Rotel because it has onions, lime juice and cilantro flavors in the tomatoes. I thought all those flavors would be great with the green beans.
These Southwestern Green Beans are so easy to make. It took about one minute of prep work and they were ready for the oven. I baked them along side our casserole and they were ready in about 20 minutes. The best part was that they tasted great! Give these a try the next time you make Mexican food. I can’t wait to have these again for Cinco de Mayo!
