Easy Green Beans and Rotel Tomatoes

I was looking for a side dish to serve with all the yummy Mexican casseroles we make. I didn’t want our standard black beans, so I decided to whip up some quick Southwestern Green Beans.

These green beans are so easy to make. It took about one minute of prep work and they were ready for the oven. Toss the fresh green beans in some olive oil, southwestern seasoning and a can of Mexican Rotel tomatoes. Spread the mixture onto a rimmed baking sheet or baking dish and pop them in the oven.

  • I use Mrs. Dash Chipotle Southwest Seasoning. 
  • You can substitute taco seasoning for the southwest seasoning.

  • I used a can of Mexican Rotel. It has onions, lime juice, and cilantro flavors in the tomatoes. I thought all those flavors would be great with the green beans. Feel free to use any flavor/heat level of Rotel tomatoes.

What to Serve with Mexican Green Beans

The best part about this recipe is that the green beans tasted great! We make these to go with all of our favorite Mexican recipes. Give these a try the next time you make Mexican food. I can’t wait to have these again for Cinco de Mayo!

Total Time 25 minutes

Ingredients:

  • 1 lb fresh green beans, trimmed
  • 1 (10-oz) can Mexican Rotel tomatoes, drained
  • 2 Tbsp olive oil
  • 1 tsp Southwestern seasoning

Instructions:

  • Preheat oven to 375ºF.
  • Toss all ingredients together and spread out on rimmed baking sheet.
  • Bake for 20 to 25 minutes.

Notes:
