Southwestern Potato Casserole

Southwestern Potato Casserole Recipe - creamy potato casserole with Rotel and topped with tortilla chips. Great casserole to freeze!

Last weekend we grilled out some skirt steak.  I used a new Lawry’s 30 minute mariande (Santa Fe Chili Marinade with Lime and Garlic) and wanted a new side dish to go with it.  Chicken Legs requested potato casserole, so I came up with this Southwestern Potato Casserole.  Potatoes, sour cream, Velveeta and Rotel – what’s not to like?   The potatoes were so creamy and had a little kick from the Rotel.  You can use mild Rotel if  you are worried about the heat.  The steak marinade was great – I highly recommend it – and the potatoes were absolutely delicious!  I divided the uncooked potoatoes into three 8×8 foil pans and froze them for later.  We have already used one pan for dinner this week.

Southwestern Potato Casserole
serves 10-12
(Printable Recipe)

  • 1 (32oz) bag shredded hash browns
  • 1 can cream of chicken soup
  • 16 oz sour cream
  • 1 Tbsp dried minced onion flakes
  • 1 can Rotel, drained
  • 8 oz Velveeta cheese, grated
  • 2 cups crushed tortila chips
  • 1/4 cup butter

Preheat oven to 400 degrees.

Combine sour cream, cream of chicken soup, Rotel tomatoes, and cheese in a large bowl. Fold in the hash browns and pour into a 3-quart casserole that has been sprayed with nonstick cooking spray.

**At this point, I divide the potato mixture between three 8×8 foil pans and freeze two of them. I cover the pans with saran wrap and foil and pop them in the freezer. I put a pan in the refrigerator on the morning that I want to serve them so they thaw out a little.**

Top casserole with crushed tortilla chips and drop dollops of butter on top. Bake for 45 minutes.

  1. I feel like this is missing steps. To clarify, do you cook the frozen hash browns first or mix frozen?
Do you heat wet mixture so cheese is not mixed in chunks? I'm going to try this tonight. Hope i do it ok

    1. No cooking before the oven. I mix the hashbrowns in frozen – just stir everything together and put in the pan and bake uncovered

  2. Thanks for a great recipe. Made it yesterday and people were going back for seconds & thirds. I think next time I'll just top with panko, tho.
