These Southwestern Scalloped Potatoes are a new favorite at our house. Thinly sliced potatoes, pepper jack cheese, colby jack cheese, cumin, Rotel tomatoes, diced green chiles, and heavy cream. I mean, what’s not to like? This recipe is super easy to make and tastes AH-MAZ-ING! I could honestly make a meal out of just these cheesy potatoes. No joke! You MUST add them to your list to make ASAP!
How to Make Southwestern Scalloped Potatoes
These potatoes look and sound fancy but they are really easy to make with only a few simple ingredients. Start with slicing some potatoes very thin. I use a hand-held mandoline slicer to slice the potatoes. It is great! It only takes a minute, and you have evenly sliced potatoes that are nice and thin.
Place the sliced potatoes in a baking dish. Top the potatoes with a can of Mexican Rotel diced tomatoes and green chiles, and a can of diced green chiles. Combine heavy cream, cumin, salt, and pepper. Pour over the potatoes and bake. Stir the potatoes every 15 minutes while they are baking. It helps the potatoes cook and get nice and creamy. Top the dish with cheese and bake until melted.
- I used Yukon Gold Potatoes. You can use any potato that you prefer.
- Are Southwestern Scalloped Potatoes spicy? No. We did not think the potatoes were spicy. I used Mexican Rotel diced tomatoes and green chiles and they are not spicy. If you want spicy potatoes, use a can of Regular or Hot Rotel.
- Can Scalloped Potatoes be made in advance? Yes! You can slice the potatoes and pour the heavy cream over them and refrigerate them overnight. You may need to add a few minutes to the baking time if baking straight from the refrigerator.
- Can Scalloped Potatoes be frozen? Yes! Bake the potatoes up until the final 15 minutes and remove them from the oven. Let the casserole dish cool completely. Cover and freeze. To reheat, simply thaw and finish the cooking until the potatoes are tender again.
- This makes a lot of potatoes. Feel free to cut the recipe in half. The baking time would stay the same.
- Are Scalloped Potatoes gluten-free? Yes! These potatoes are gluten-free.

Southwestern Scalloped Potatoes
Ingredients:
- 2 lb Yukon gold potatoes, peeled and thinly sliced
- 1 (10-oz) can Mexican Rotel diced tomatoes and green chiles, undrained
- 1 (4-oz) can diced green chiles, undrained
- 3 cups heavy whipping cream
- 1 Tbsp cumin
- 1½ tsp salt, or to taste
- ¼ tsp black pepper, or to taste
- 1½ cups shredded pepper jack cheese
- ½ cup shredded colby jack cheese
Instructions:
- Preheat oven to 400ºF. Lightly spray a 9×13-inch pan with cooking spray.
- Layer potatoes in the prepared pan. Top with Rotel and diced green chiles.
- Stir together heavy cream, cumin, salt, and pepper. Pour over potatoes.
- Bake for 45 minutes, stirring every 15 minutes.
- Sprinkle with cheese and bake an additional 15 minutes, or until golden brown and bubbly.
