Sweet Potato Pound Cake

I came across this Spiced Sweet Potato Bundt Cake and couldn’t resist trying it. It is a very unique cake recipe. It is made with baby food and apple sauce. No vegetable oil or butter. It is basically health food – right?!?

The house smelled AMAZING while the cake was baking. We could not wait to try it. I topped the cake with a quick maple glaze. OMG! SO much amazing flavor! I don’t even really like sweet potatoes, but I absolutely LOVED this cake. This is perfect for any upcoming holiday meals. Top the cake with some whipped cream and enjoy!

How to Make Spiced Sweet Potato Bundt Cake

This cake is super easy to make from scratch with only a few simple ingredients. Beat eggs in a large bowl with a handheld mixer. Add sugar, applesauce, baby food, and spices; mix well. Add flour and baking powder; mix until well combined. Pour cake batter into a greased and floured Bundt cake pan and bake until a toothpick inserted into the middle of the cake comes out clean or with a few crumbs. Cool the cake completely on a wire rack. In a medium bowl, whisk together powdered sugar, maple syrup, and ground cinnamon. Pour the glaze mixture over the top of the cooled cake.

Tips for Making Bundt Cake from Scratch

  • I used Gerber Stage 2 Sweet Potato Baby Food.
    • You can substitute pumpkin baby food if you prefer.
  • I used Mott’s applesauce in the cake.
  • Make sure to use real maple syrup in the glaze. Not pancake syrup.
    • You can substitute milk for maple syrup if you prefer.
    • For an extra decadent cake, top the cake with cream cheese frosting. YUM!
  • This recipe uses a teaspoon of pumpkin pie spice. If you don’t have any on hand, you can make your own with ½ tsp ground cinnamon, ¼ tsp ginger, ¼ tsp nutmeg, and ¼ tsp allspice.
  • You can bake the cake in any size cake pan that you prefer. You will just need to adjust the cooking time.
  • Can Sweet Potato Bundt Cake be frozen? Yes! Cool the cake completely and wrap the cake in plastic wrap and aluminum foil.
    • I prefer to freeze the cake without the glaze.
    • The cake will keep in the freezer for 3 months.
    • To freeze the glazed cake, place it in the freezer, unwrapped, for 4-5 hours. Once it’s completely frozen, remove it and wrap it before putting it back in the freezer. This will prevent the glaze from sticking to the wrap.
    • You can freeze any leftover slices of cake. Wrap each piece of cake in plastic wrap, and then cover that with aluminum foil. When you’re ready to eat a slice of cake, simply take it out of the freezer and pop it into the fridge for a few hours.
  • How long does Bundt cake last? The cake will keep 4 to 5 days in an airtight container at room temperature.

Easy Holiday Dessert for a Crowd

As I said, this cake was a huge hit at our house! I’ve made it several times and everyone enjoys it. This is a great dessert for when you need to feed a crowd. I have this on our menu for Thanksgiving. I can not wait. Top the cake with some whipped cream and pecans. It would also be great drizzled with some caramel sauce. YUM!

  • cup powdered sugar
  • ¼ cup maple syrup
  • ¼ tsp cinnamon

Instructions:

  • Preheat oven to 350ºF. Grease and flour a Bundt cake.

    1. Well, sweet potato baby food is REAL sweet potatoes. The only ingredients are sweet potatoes and water.
      That being said, I have only made this with baby food. I can not speak to how the cake will turn out using homemade mashed potatoes. I suspect it won’t be the same as the moisture content is different. You can obviously make it however you want.
