Easy BBQ Grilled Chicken

Grilled chicken is a favorite at our house. We grill chicken year-round and this Spicy Pineapple Brown Sugar Chicken is a favorite. With only 5 ingredients, it is a snap to make. We usually grill a double batch and eat it all week for a quick lunch. I love this chicken on top of a salad or in a tortilla wrap. YUM!

How to Grill Chicken

This chicken is super easy to make. Start with mixing together the marinade – pineapple juice, brown sugar, BBQ sauce, chili powder, and red pepper flakes. Pour the mixture over the chicken and let it sit in the refrigerator for a few hours. Remove the chicken from the marinade and throw it on the grill. Make sure to cook the chicken until it reaches an internal temperature of 165ºF.

Don’t worry if you don’t have a grill. You can still make this chicken. Marinate the chicken as directed. Cook the chicken in a skillet on both sides for 3 to 4 minutes. Transfer the chicken to a baking sheet and finish cooking it in the oven at 400ºF for about 10 minutes.

What to Serve with Spicy Pineapple Brown Sugar Chicken

This chicken has been on repeat at our house. The flavors are fantastic! Despite the name, this isn’t super spicy. Since the red pepper flakes are only in the marinade, you are just getting a hint of heat. If you want spicier chicken, reserve some of the marinade to brush on the chicken as it cooks. Make sure to save the marinade BEFORE you add it to the chicken. Don’t use the marinade after the chicken has been sitting in it.

Spicy Pineapple Brown Sugar Chicken – easy 5 ingredient marinade! SO good!!! We actually made it twice in one week. Pineapple juice, brown sugar, BBQ sauce, chili powder, and red pepper flakes. Such an easy weeknight meal. Leftovers are great on top of a salad or in a sandwich wrap.

Ingredients:

  • 1 cup pineapple juice
  • 6 Tbsp BBQ sauce
  • 6 Tbsp brown sugar
  • 1 Tbsp chili powder
  • 1 Tbsp red pepper flakes
  • 4 to 6 boneless skinless chicken breasts

Instructions:

  • Whisk together pineapple juice, brown sugar, BBQ sauce, chili powder, and red pepper flakes.
  • Place chicken in a gallon ziplock bag. Pour remaining marinade over chicken. Seal bag and refrigerate 2 to 4 hours.
  • Remove chicken from marinade. Grill until done, 12 to 15 minutes.

Notes:

Reserve ¼ cup of marinade to brush on chicken before taking off the grill if you want spicer chicken.
Can use any cut of chicken you prefer – tenders, breasts, thighs, drumsticks.
To cook the chicken without a grill, cook the chicken in a skillet for 3 to 4 minutes per side. Place chicken on baking sheet and cook at 400ºF for 10 minutes.
Cook chicken until it reaches an internal temperature of 165ºF.

  2. I’ve made this recipe many times and love it! My boyfriend suggested making a pulled version of this, so tonight I made up the marinade, poured it in my instant pot, added frozen chicken tenders (or breasts), cooked 11 min followed by natural release, added a cornstarch slurry to thicken, shredded and served with baked sweet potatoes. Turned out amazing!! Can’t wait to have the leftovers on a Hawaiian bun tomorrow! Love this blog, keep killin it!
