We love to make no-bake eclair cakes. We have several on the blog – Lemon, Chocolate Peanut Butter and the Original. We LOVE them. They are so easy to make and great for parties. This Strawberries and Cream Eclair Cake is no exception. Super easy to make and even easier to eat! It is so light. You can eat a ton of it without feeling full. I don’t know if that is a good or bad thing! LOL!
How to make a No-Bake Eclair Cake
This No-Bake Strawberry Eclair Cake is very easy to make. It is made up of layers of graham crackers, a mixture of vanilla pudding and cool whip and sliced strawberries. The top of the cake is topped with a can of vanilla frosting. I like to top the finished cake with additional sliced strawberries. I think it makes it look pretty.
This Strawberries and Cream Eclair Cake is best made the night before serving. You want to let the graham crackers soften at least four hours if not longer. It is too hard to cut the cake if the graham crackers are crunchy.

1 box graham crackers
2 (3 1/4-ounce) boxes vanilla instant pudding
3-1/2 cups milk
1 (8-ounce) container Cool Whip, thawed
1-pint strawberries, sliced
1 (16-oz) can vanilla frosting
additional sliced strawberries for garnish
Spray the bottom of a 9×13 pan with cooking spray.
Line the bottom of the pan with whole graham crackers. Layer with half of the strawberry slices.
In the bowl of an electric mixer, mix pudding with milk; beat at medium speed for 2 minutes. Fold in whipped topping.
Pour half the pudding mixture over graham crackers. Place another layer of whole graham crackers on top of pudding layer. Layer with remaining strawberry slices. Pour over remaining half of pudding mixture and cover with another layer of graham crackers.
Heat the container of prepared frosting, uncovered in the microwave for 30 to 45 seconds. Pour over the top of the cake.
Refrigerate for at least 8 hours before serving. Top with additional strawberry slices if desired.
