The BEST No-Bake Strawberry Eclair Cake

No-bake eclair cake desserts are a favorite at our house. We have several on the blog – Lemon, Chocolate Peanut Butter, and the Original Chocolate version. We LOVE them all! They are so easy to make and great for parties. This Strawberries and Cream Eclair Cake is no exception. Super easy to make and even easier to eat! It is so light. You can eat a ton of it without feeling full. I don’t know if that is a good or bad thing! LOL!

How to Make Strawberries & Cream Eclair Cake

To make the dessert, line the bottom of a 9×13-inch baking dish with whole graham crackers. Top the graham crackers with fresh strawberry slices. In the bowl of an electric mixer, mix pudding mix and milk; beat at medium speed for 2 minutes. Fold in a tub of Cool Whip. Pour half the pudding mixture over graham crackers. Place another layer of whole graham crackers on top of the pudding layer. Add another layer of strawberry slices. Top the strawberries with the remaining half of the pudding mixture and cover with another layer of graham crackers. Heat a container of frosting in the microwave for 30 to 45 seconds. Pour over the top of the cake. Refrigerate for at least 8 hours before serving. Top with additional strawberry slices if desired.

  • I used a box of Honey Maid Graham Crackers. This is also good with cinnamon graham crackers.
  • This dessert is best made the night before serving. You want to let the graham crackers soften for at least four hours if not longer. It is too hard to cut the cake if the graham crackers are crunchy.

Ingredients:

  • 1 (14.4-oz) box graham crackers
  • 2 (3.25-oz) boxes vanilla instant pudding
  • cups milk
  • 1 (8-oz) container Cool Whip, thawed
  • 1 pint strawberries, sliced
  • 1 (16-oz) can vanilla frosting
  • additional sliced strawberries for garnish

Instructions:

  • Spray the bottom of a 9×13 pan with cooking spray.
  • Line the bottom of the pan with whole graham crackers. Layer with half of the strawberry slices.
  • In the bowl of an electric mixer, combine pudding mix and milk; beat at medium speed for 2 minutes. Fold in whipped topping.
  • Pour half the pudding mixture over strawberries. Place another layer of whole graham crackers on top of the pudding layer. Top the crackers with remaining strawberry slices.
  • Pour the remaining half of the pudding mixture over the strawberries and cover with another layer of graham crackers.
  • Heat the container of prepared frosting, uncovered in the microwave for 30 to 45 seconds. Pour over the top of the cake.
  • Refrigerate for at least 8 hours before serving. Top with additional strawberry slices if desired.
