Easy Strawberry Quick Bread Recipe

This Strawberry Bread is one of our favorite strawberry recipes. This moist quick bread is loaded with strawberry flavor! Flour, sugar, baking soda, salt, cinnamon, eggs, canola oil, and moist strawberries. This easy recipe is the perfect way to use up all those yummy fresh strawberries this summer!

How to Make Fresh Strawberry Bread

This sweet bread is easy to make with only a few simple ingredients. Chop a pint of fresh strawberries into small pieces. In a large bowl, combine flour, sugar, baking soda, salt, and ground cinnamon. Add eggs and vegetable oil to the dry ingredients and mix well. Stir in diced strawberries. Pour batter into a parchment paper lined loaf pan. Bake until a toothpick inserted into the center of the bread comes out clean. Cool loaf on a wire rack.

The hardest part about this recipe is chopping the strawberries. LOL! I usually have some chopped strawberries in the freezer just for this bread. I like to stock up on strawberries when they go on sale at the store!

  • Sprinkle the top of the bread with some powdered sugar or add a simple glaze.
    • To make a quick vanilla glaze, in a small bowl combine 1 ½ cups powdered sugar with ¼ cup milk and a splash of vanilla extract.
  • Sometimes I like to add some mini chocolate chips to the bread batter. YUM!
  • You can mix the bread batter by hand or with an electric mixer.
  • Can I make Strawberry Muffins? Yes. You can bake the batter in any pan that you prefer. Loaf pan, muffin pan, mini muffin pan, or mini loaf pans. You will need to adjust the baking time accordingly.
  • I use fresh strawberries. You can substitute an equal amount of thawed frozen berries.
  • Can Strawberry Bread be frozen? Yes! Bake and cool the bread completely on a cooling rack. Wrap the bread in plastic wrap and aluminum foil and freeze.
  • Store leftovers in an airtight container or tightly covered in plastic wrap at room temperature.

Equipment:

Ingredients:

  • cups all-purpose flour
  • 1 cup sugar
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ tsp cinnamon
  • 2 eggs
  • 10 Tbsp vegetable or canola oil (½ cup plus 2 Tbsp)
  • 1 pint fresh strawberries, hulled and chopped

Instructions:

  • Preheat oven to 350ºF. Lightly spray a 9x5x3-inch loaf pan with cooking spray. Set aside.
  • Combine flour, sugar, baking soda, salt and cinnamon in a large mixing bowl.
  • Add eggs and oil. Mix well.
  • Stir in chopped strawberries.
  • Pour mixture into prepared pan.
  • Bake for 1 hour.

Notes:

Can freeze baked bread for later.

    1. You absolutely can – just thaw them first. I've made this with frozen strawberries and it turns out great!
