What happens when you combine lemon cake mix and strawberry pie filling? It makes the most DELICIOUS cake EVER!!! Top the cake with a quick lemon pudding frosting and you have gone to dessert heaven! I made this Strawberry Lemonade cake for a cook-out and it was gone in a flash! Everyone LOVED it and asked for the recipe. This is super simple to whip up whenever you get the craving. It literally takes longer for my oven to preheat than to whip up this Strawberry Lemonade cake!
How to Make Strawberry Lemonade Cake
In a large bowl, combine cake mix, pie filling, vanilla extract, eggs, and milk. Mix with an electric mixer just until combined. Pour batter into a 9×13-inch baking dish and bake. While the cake is cooling, make the quick homemade frosting. In a large bowl, beat together pudding mix, powdered sugar, and milk. Stir in a tub of Cool Whip and frost cake.
- I used a hand-held mixer to mix up the cake batter. Using a mixer will break up the strawberries in the pie filling. If you want bigger chunks of strawberries in the cake, mix the cake batter by hand.
- Feel free to stir in some fresh chopped strawberries and lemon zest into the cake batter. It really puts the cake over the top.
- The cake can be made a day or two in advance and stored in an air-tight container in the refrigerator. I just pop the lid on top of my pyrex glass baking dish and it is good to go.

Cake
- 1 box Lemon cake mix
- 1 (21-oz) can strawberry pie filling
- 1 tsp vanilla extract
- 2 large eggs
- ¼ cup milk
Frosting
- 1 (3.9-oz) package Vanilla Instant Pudding
- ¼ cup powdered sugar
- 1 cup cold milk
- 1 tsp lemon extract
- 1 (8-oz) tub Cool Whip topping, thawed
Instructions:
Cake
- Preheat oven to 350ºF. Grease a 9×13 inch pan. Set aside.
- In a large bowl, combine cake mix, pie filling, vanilla extract, eggs and milk. Mix with an electric mixer just until combined.
- Pour batter into prepared pan. Bake for 25-30 minutes or until toothpick inserted in center comes out clean. Cool.
Frosting
- Beat pudding mix, powdered sugar and milk in large bowl with whisk for 2 minutes.
- Stir in Cool Whip and frost cake.

I made this cake this morning for a friends birthday this evening. I’m hoping it tastes as good as other comments ( I’m sure it will), there’s only one thing I can say in a negative tone, there’s enough frosting for 3 cakes!😂, so I’m hoping it freezes well. 🤞.

This cake is absolutely amazing! My daughter made it and we can’t stay out of it. So moist and delicious. It appears like so much work because the canned strawberries look like you used fresh strawberries. So simple, easy and YUMMY!!
