Sweet Potato Salad recipe
This Sweet Potato Salad recipe has been a long time coming. Chicken Legs got this recipe a million years ago from a caterer when he had a work lunch catered. He loved the Sweet Potato Salad that the caterer served so much, that he asked her for the recipe. Luckily, she obliged! I’ve had this on my list of recipes to make forever! I finally decided to make the recipe and it was delicious! I can’t believe that I waited so long to make this Sweet Potato Salad!!!
This Sweet Potato Salad is super delicious! Sweet potatoes, apples, pecans, raisins, celery and green onions tossed in a brown sugar, honey, lemon, cinnamon and nutmeg dressing. This is a fantastic side dish! It would be a great addition to your holiday meal. We’ve also eaten it with sandwiches and grilled meats. Can’t wait for a cold leftover turkey sandwich and a big ol’ scoop of this Sweet Potato Salad – YUM!
Sweet Potato Salad
INGREDIENTS:
- 3 pounds sweet potatoes
- 1-½ cups dried apples, chopped
- 1 cup chopped pecans
- 1 cup raisins
- 1 cup diced celery
- ½ cup sliced green onions
- 1 cup brown sugar
- ½ cup honey
- ¼ cup lemon juice
- ½ cup canola oil
- ½ tsp cinnamon
- ½ tsp nutmeg
INSTRUCTIONS:
- Peel sweet potatoes. Fill a large saucepan halfway with water and bring to a boil. Add sweet potatoes. Cover and cook for about 15 minutes, until tender. Drain potatoes and cool. Dice cooked sweet potatoes and place in large bowl.
- Add dried apples, pecans, raisins, celery and green onions to bowl with sweet potatoes.
- Whisk together brown sugar, honey, lemon juice, oil, cinnamon and nutmeg.
- Pour dressing over sweet potato mixture and gently toss to coat.
Maybe this is a dumb question, but should this be served warm? Room temperature? Cold? Not sure what would be best. Thanks
Either warm or cold is fine. Just your personal preference.
This sounds great!
Cut up the sweet potatoes before you cook them, or you'll end up with the potatoes being mushy on the outside before they are cooked in the middle.
