I adapted this recipe from The Pioneer Woman. I saw the recipe on her website and immediately added it to our menu. Boy, am I glad I did. Holy Cow! This was good chicken!! Sweet & tangy and topped with bacon & cheese – what’s not to like?!?!  

This chicken is very simple to make. Whisk together honey, mustard, lemon juice, paprika, and cayenne pepper. Pour the marinade over some chicken and let it marinate for a few hours to overnight. When ready to cook, pop the chicken in the skillet and finish off in the oven.

I used boneless skinless chicken breasts in this recipe. Feel free to use your favorite cut of chicken instead. This would be great with chicken thighs or tenders too. Just make sure to adjust the cooking time and check for in internal temperature of 165ºF.

This Tangy Bacon Cheddar Chicken makes for a quick and easy weeknight meal. I love to make this during the week, but it is also worthy of company. We loved this chicken so much that it is already back on the menu this weekend.

Tangy Bacon Cheddar Chicken – chicken marinated in homemade honey mustard, pan seared and topped with bacon and cheddar. I could eat this every week! Can also grill chicken if desired.

Ingredients:

  • 4 boneless skinless chicken breasts
  • 8 strips thick cut bacon, cooked
  • ½ cup honey
  • ½ cup dijon mustard
  • 2 Tbsp lemon juice
  • ½ tsp paprika
  • ½ tsp salt
  • dash cayenne pepper
  • 1 Tbsp olive oil
  • 1 cup sharp cheddar cheese

Instructions:

  • Mix together honey, dijon mustard, lemon juice, paprika, salt and cayenne pepper.
  • Place chicken in ziplock bag. Pour marinade over chicken and place in refrigerator for 1-3 hours.
  • Preheat oven to 400ºF.
  • Heat olive oil in skillet over medium high heat. Add chicken. Cook 3 minutes per side. Place chicken on large baking sheet. Cook in oven for 10 minutes.
  • Remove chicken from oven. Top with cooked bacon and cheddar. Return to oven and cook an additional 3-5 minutes, until cheese is melted.

Notes:

Can grill chicken if desired. Cook until chicken reaches an internal temperature of 165ºF.

  1. I grill the chicken on my George Foreman Grill. Then, I put them on a baking sheet and top with the cheese and bacon, and put them in the oven for about 5 minutes or so. Just long enough to melt the cheese. This has been a big hit with my family who normally don't care for chicken. Soooo glad it's so easy too. 🙂

  2. This is very similar to a recipe that I make. I grill my cheicken breaasts, then put them on a baking sheet and put one tbsp of BBQ sauce on them, 3 or 4 thin slices ham and then a large slice of ColbyJack cheese. Bake until cheese is melted. Kids love it.
