In my opinion, Mexican food is the ultimate comfort food! I absolutely love it! These Lazy Enchiladas have been on repeat at our house. This quick enchilada recipe doesn’t take much effort to make and the whole family loves them! This recipe is different from traditional homemade enchiladas; this casserole uses frozen taquitos as the base. This is a great recipe for busy weekdays after a long day at work! Add this casserole recipe to your menu. It is sure to get the stamp of approval from your family too!

What is a taquito?

A taquito is a Mexican food dish that typically consists of small rolled-up corn tortillas that contain a filling of ground beef, cheese, or chicken. The filled tortilla is crisp-fried or deep-fried until crispy.

How to Make Lazy Enchiladas with Taquitos

Ingredients:

  • 1 (22.5-oz) box frozen Taquitos (any flavor)
  • 1 (10-oz) can enchilada sauce
  • cups shredded pepper jack cheese

Instructions:

  • Preheat oven to 425ºF. Lightly spray a 9×13-inch pan with cooking spray.
  • Place frozen taquitos in a single layer in the prepared pan. Top with enchilada sauce.
  • Bake for 20 minutes.
  • Remove from oven and top with shredded cheese.
  • Bake for an additional 5 minutes, until cheese is melted.
