Easy Asparagus with Teriyaki Sauce & Mushrooms

This Teriyaki Asparagus and Mushrooms is on repeat in our house. It has been our go-to side dish for months. It tastes great and is super easy to make! Fresh asparagus, mushrooms, shallots, garlic, teriyaki sauce, sesame seeds – YUM!!! Sometimes I double the recipe so we have leftovers during the week.

How to Make Easy Asparagus in the Skillet

This asparagus is super easy to make. Start by trimming any tough ends from the asparagus. Once the asparagus is trimmed, cut the spears into 1-inch pieces. Melt butter in a skillet and add the asparagus, mushrooms, and shallot. Once the vegetables are starting to soften add some garlic and teriyaki sauce. Sprinkle the asparagus and mushrooms with sesame seeds before serving.

I used a bottle of Sweet Baby Ray’s Teriyaki sauce in this recipe. I like it because it is thicker than Kikkoman.

Want to make this a main dish? Feel free to add some shrimp or chicken to the dish. I think that would be super yummy! I would add the chicken to the pan first so it has time to cook through. If you are using shrimp, add it when you add the teriyaki sauce. Shrimp only takes a couple of minutes to cook.

Teriyaki Asparagus and Mushrooms – our favorite asparagus recipe. SO delicious!! Fresh asparagus, shallot, mushrooms, garlic, teriyaki sauce, and sesame seeds. Ready to eat in about 15 minutes. Great weeknight side dish!

Ingredients:

  • 2 bunches fresh asparagus, trimmed and cut into 1-inch pieces
  • 8- oz fresh mushrooms, sliced
  • 1 shallot, diced
  • 3 Tbsp butter
  • 1 tsp minced garlic
  • ¼ cup teriyaki sauce
  • ½ tsp sesame seeds

Instructions:

  • Melt butter in a skillet over medium-high heat. Add asparagus, shallot, and mushrooms. Cook until starting to soften, about 4 to 5 minutes.
  • Add garlic and cook for 30 seconds.
  • Add teriyaki sauce. Cook for an additional 5 minutes, or until asparagus reaches desired tenderness. Sprinkle with sesame seeds.
  • Serve immediately.

Notes:

Can add chicken or shrimp to make this a main dish.
