This Potato Salad is THE BEST! It isn’t full of mayonnaise, so you can really taste all the flavors in the potato salad. I hate potato salads that are a little bit of potatoes and a lot a bit of mayonnaise. This potato salad is light on the mayonnaise and full on the fresh herbs and vegetables. One surprise flavor you will taste is lemon. The dressing has some lemon juice and zest in it. It really makes the potato salad. This is our “go-to” potato salad recipe. It is simple and tastes great. Everyone always asks for the recipe!

The Ritz Carlton Potato Salad
Ingredients:
- 1½ pounds small heirloom potatoes (purple, red, fingerling)
- 2 ribs celery, chopped
- ¼ cup mayonnaise
- 2 Tbsp finely chopped fresh chives
- ½ tsp grated lemon zest
- 1 Tbsp fresh lemon juice
- ½ tsp sugar
- 1-1/2 tsp fresh tarragon finely chopped
- 1/4 tsp salt
- 1/4 tsp pepper
Instructions:
- Cover potatoes with water in a large pot and season well with salt. Bring to a boil, then simmer until tender, 12-20 minutes.
- While potatoes cook, stir together celery, mayonnaise, chives, lemon zest, lemon juice, sugar, salt, tarragon and pepper in a large bowl.
- Drain potatoes and cool completely, then halve or quarter. Add to dressing and toss to coat.

Can I use Herbs de Provence instead of tarragon?
I'm sure that would be fine. Enjoy!
Not a big fan of tarragon but the recipe exactly as written is by far the best potato salad I have ever had!
Do I have to use tarragon? Or can I substitute something else?

We'll have to try this but I must admit to mustard being a requirement for good potato salad for me – maybe the lemon juice will satisfy that. Your shot of it makes me want to dive into the screen.
