YUM! I made this earlier this week and LOVED it! I actually ended up eating this queso dip for lunch. It was so good that I couldn’t stop eating it! I already have everything ready to make this for our football parties this weekend.
How To Make The Ultimate Queso
This recipe is from Plain Chicken reader, Ally Dorrough. I met Ally last year when I went to Gulf Shores. We follow each other on social media and she messaged me last weekend about this dip. She said it was great and she wasn’t lying.
The Ultimate Queso is super easy to make. You can make this cheese dip on the stove, in the microwave or in the slow cooker. All cooking methods start with browning sausage. Once the sausage is cooked, add the rest of the ingredients – Velveeta, cream cheese, chili beans, diced tomatoes and green chiles, chili powder, and cumin. Cook until the cheeses are melted. This will take a few minutes in the microwave or stove and a couple of hours on LOW in the crockpot.
Tips for Making The ULTIMATE Queso
I used a roll Hot Jimmy Dean Sausage. You can brown the sausage ahead of time and refrigerate it until you are ready to make the queso dip. If you aren’t a fan of sausage, you can substitute ground beef or ground turkey.
I used a can of regular Rotel diced tomatoes and green chiles. If you prefer the dip to be spicer, use a can of HOT Rotel. If you want a milder dip, use a can of MILD Rotel or a can of plain diced tomatoes. If the dip starts to get too thick, add about a ½ cup of milk to thin it out.
The ULTIMATE Queso is Great for Parties
As I said, this ULTIMATE Queso is ridiculously good. It has the best parts of all of our favorite queso dips. This makes a lot of cheese dip, so it is great for parties and tailgating! We love to serve this dip with Fritos and tortilla chips. It would also be great on top of nachos or a baked potato. I am SO glad Ally shared this dip with me so I can share it with YOU!

The ULTIMATE Queso
Equipment:
Ingredients:
- 1 lb hot sausage
- 1 (10-oz) can diced tomatoes and green chiles, undrained
- 1 (15-oz) can chili beans, undrained
- 1 (8-oz) package Velveeta cheese
- 1 (8-oz) package cream cheese
- 1 Tbsp chili powder
- 1 Tbsp cumin
- ½ cup milk, optional
Instructions:
- In a large skillet, cook sausage until crumbled and no longer pink. Drain fat.
- Stovetop Preparation: In a large saucepan or Dutch oven, combine cooked sausage and remaining ingredients. Cook on medium until cheese has melted. Add milk if cheese dip is too thick.
- Microwave Preparation: In a large microwave-safe bowl, combine cooked sausage and remaining ingredients. Microwave on HIGH for 4 minutes, stir. Microwave on HIGH for an additional 4 minutes, stir. Continue microwaving in 1 to 2-minute intervals until cheese is melted and dip is thoroughly heated. Serve immediately. Add milk if cheese dip is too thick.
- Slow Cooker Preparation: Combine cooked sausage and remaining ingredients in the slow cooker. Cover and cook on LOW 1 to 2 hours, until cheese is melted. Add milk if cheese dip is too thick.
