OMG! This was SO good! Seriously the best squash casserole we’ve ever eaten. Loaded with squash, bell pepper and onions. The house smelled so good while the veggies were cooking in the skillet! My favorite part of the casserole was the cheese. It really put the casserole over the top! This was super simple to make and could even be assembled ahead of time and baked later that day or the next day. This would be a great side dish for any summer cookouts and even the holidays!
The Ultimate Squash Casserole
Ingredients:
- 1½ pounds fresh squash sliced
- ½ green bell pepper, chopped
- ½ sweet onion, chopped
- 2 Tbsp butter
- 1 tsp salt
- ½ tsp black pepper
- 2 eggs
- 4 tsp chicken base or chicken bouillon
- 1 (10.5-oz) can Cream of Mushroom soup
- 1½ cups shredded cheddar cheese
- 1/4 cup butter, melted
- 20 to 30 Ritz crackers, crushed
Instructions:
- Preheat oven to 325°F. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
- In a large skillet, melt 2 tablespoons of butter. Add squash, bell pepper, onion, salt and pepper. Cook until vegetables are soft. Remove from heat.
- Mix together eggs, chicken base, mushroom soup, cheese, and melted butter. Stir in cooked vegetables. Pour into prepared pan. Top with crushed Ritz crackers.
- Bake, uncovered, for 20 minutes.

do you used condensed cream of mushroom soup or just regular?
I used Campbell’s condensed soup. I don’t know what you mean by “regular”
Love squash!! A teaspoon of salt seems like a lot, so would it be ok to reduce the amount? And where is it added, in sautéing the vegetables or in the cream soup mixture?
you can adjust the salt and pepper to your taste
How do you combine eggs? I see it in the ingredients but not the directions?

You can do that. You will probably need to add 5 or 10 minutes to the baking time if baking straight out of the fridge
Can cream of chicken soup be used instead of mushroom? I hate casseroles made with cream of mushroom?

Works just fine. I don't use mushroom soup either. Maybe back off the chicken bouillon a little.
Can I use another cream soup because my husband does not like anything mushroom?!

i am going to use the bullion cubes also. but dont you have to dissolve them in water? How much water did you use?
Brie- you want to crush the boullion cubes up. If you want to dissolve them, only use a tablespoon of hot water. You don’t want to add extra liquid to the casserole
