Cracker Thin Crust Pizza

I saw this recipe on the internet and immediately added it to the weekly menu.  I found the use of tortillas as the crust interesting!  We love super thin crust pizza, so I knew this would be a hit at our house. I was right. We both LOVED this easy pizza. Chicken Legs declared this his favorite pizza! It is already on the menu again this weekend.

How to Make Tortilla Pizza

This pizza is so simple to make – simply top the tortillas with pizza sauce, cheese, and your favorite toppings.  We used flour tortillas. You can use low-carb, gluten-free, or whole wheat tortillas for this pizza too. Whatever you like will work fine.

The key to getting the pizza nice and crispy is to preheat the pan in the oven before placing the tortillas on top. Once the oven has preheated, place the assembled pizza on the pan. Spritz the pizzas with some cooking spray and bake for about 10 minutes. SO easy!

Tortilla Pizza – cracker-thin pizza. So easy to make and tastes great! Tortillas topped with pizza sauce, cheese, and your favorite toppings. Can use flour, whole wheat, gluten-free, or low-carb tortillas. Everyone can customize the pizza with their favorite toppings. A fun change to pizza night!

Ingredients:

  • 1 soft taco tortilla
  • 3 Tbsp pizza sauce
  • 1/2 cup mozzarella cheese
  • toppings of your choice – pepperoni, mushrooms, sausage, peppers
  • cooking spray

Instructions:

  • Place large baking sheet or pizza stone in oven. Preheat to 425┬░F.
  • Spread pizza sauce on the tortilla – spread to the edge of the tortilla. Top with cheese and toppings.
  • Remove baking sheet or pizza stone from the oven once preheated. Place assembled pizza on a baking sheet or preheated pizza stone. Lightly spray pizza with cooking spray.
  • Bake for 10 minutes, or until cheese is melted and bubbly.

Notes:

Can use any type of tortilla – flour, whole wheat, gluten-free, or low carb.
Can use any size tortilla. Adjust the sauce and cheese amounts accordingly.

  1. In the summer you can stick them on the grill. Just keep watch and turn them every few minutes so they don't burn. Super easy and no clean up

  2. These were delicious! A huge hit with the kids. I definitely recommend hearing the tortillas on the stone for a few minutes before making the pizzas and cooking them

  3. The kids make these all the time for years. We started making them in a frying pan, crispy crust. Then the kids would make them after school in the microwave. In recent years we make them in the winter on the woodstove or when we have power outages, etc. It is a family favorite. They have been done during sleepovers by the kids too.

  4. Thank you so much! I saw this on Pinterest, and it was a real lightbulb/duh moment for me. I've made it twice now, once with traditional pizza type toppings, and once with refried beans and leftover taco meat for a "mexican style" cracker pizza.   8. I have used this same idea of using tortillas to make 'calzones' Stuff with your favorites, fold over and grill in a skillet just like you would a grilled cheese. Serve Pizza sauce with them on the side. So easy, so quick and so yummy~~~~

  9. I've been making quick pizza's using tortilla's like this fro quit awhile. I try to always have the ingredients on hand. I suggest using a pizza stone. I put the tortilla on the stone for a minute or two while getting the ingredients ready, then use that side that got a little crispy to place the ingredients on….super crunchy then.I also found a great low fat/calorie tortilla that tastes wonderful…LaBanderita!! Awesome…
