Weekly Meal Plan – What to Make for Dinner
Good morning! Anyone else counting down the days until the 4th of July holiday? I am SO ready for a break! Are you lucky enough to be able to take Thursday AND Friday off? I sure hope so!!
This weeks menu is loaded with easy and delicious recipes. We are grilling out 4 nights this week. Our grill is in overdrive this time of year!! Now, I know some of you don’t have a grill. Don’t worry! You can still make the all grilled chicken recipes indoors. My preferred indoor cooking method is to pan sear the chicken for 3 or 4 minutes on each side and then bake it on a baking sheet for 10 minutes at 400ºF. Perfect! Don’t forget to pound your chicken to an even thickness before marinating! It makes all the difference. No more half juicy, half dry chicken breasts. Pounding the chicken allows it to cook evenly. It will be nice and juicy all the way through!
I’ve got several non-grilling recipes on the menu too. Several of the recipes can be made in advance and refrigerated or frozen for later. I love make-ahead recipes!!
