What to Make For Dinner

Good Morning! I hope everyone is having a great weekend. It is time to start planning the week ahead. Today I am sharing our weekly meal plan. I’ve got a quick and easy main dish and side for every single night of the week. I am also sharing a delicious dessert.

All of the recipes will easily feed a family of four. Many of the recipes can be made in advance and refrigerated or frozen for later. I love to make a few recipes on Sunday for super easy meals during the week.

MONDAY
Cajun Sausage Chicken and Spinach Pasta - seriously delicious!! Pasta, andouille sausage, chicken, diced tomatoes, chive and onion cream cheese, heavy cream, mozzarella cheese, parmesan cheese and cajun seasoning. Makes a ton! Can divide into two pans and freeze one for later. Great for potlucks and dinner parties. Everyone LOVES this casserole! #cajun #mardigras #freezermeal #pasta #casserole
TUESDAY
Pulled Pork Vegetable Soup - hands down the BEST vegetable soup EVER!!! Ready to eat in about 30 minutes. Just dump everything in the pot, bring to a boil and simmer. SO easy! Smoked pulled pork, creamed corn, diced tomatoes and green chiles, stewed tomatoes, mixed vegetables, onion, garlic, chili powder, chicken broth and brown rice. Serve with some cornbread and you have a quick and delicious meal! We ate this for lunch and dinner the same day! YUM! #soup #vegetables #pork
