This Slow Cooker White Bean Chicken Chili recipe is from Plain Chicken reader, Penney. The chili is super easy to make. You just dump everything in the slow cooker and let it do its thing. Perfect for busy weeknights! Chicken, white beans, diced green chiles, chicken broth, salsa, cumin, and grated cheese.

The grated cheese in the soup really puts this chili over the top. YUM! I’ve never had a white bean chicken chili with cheese cooked into it. I won’t make it another way! It smells amazing while it is cooking and tastes even better! It is a great alternative to traditional chili. We ate this for dinner and had the leftovers for lunch the next day. It was just as good reheated, if not better! This recipe is a great alternative to traditional chili.

How to Make White Bean Chicken Chili in the Crock Pot

As I said, this chili is super easy to make. Place chicken breasts, great northern beans, diced green chilies, salsa, chicken stock, cumin, and grated pepper jack cheese in the crockpot. Season with salt and black pepper. Cover and cook on LOW for 6 hours. Remove the chicken breasts from the slow cooker and shred them with two forks. Add the shredded chicken back to the slow cooker and stir.

  • 2 boneless skinless chicken breasts
  • 3 (15-oz) cans white beans, drained and rinsed
  • 1 (4-oz) can green chiles
  • 3 cups salsa
  • 3 cups chicken broth

    I followed the recipe exactly as is.

  2. I made this two days ago and it was really tasty! We like 'spicier' foods so I used hot diced green chilies and medium salsa. I also used 1 can pinto and 2 cans white/navy beans. More importantly, it was DONE after 3-4 hrs on low! Any longer and it would have burned. I will definitely make this again!

    1. You could use frozen chicken. It would definitely cook. I used cooked chicken because that is what the original recipe said to use.
