Easy Slow Cooker Chicken Soup

This Slow Cooker White Bean Chicken Chili recipe is from Plain Chicken reader, Penney. The chili is super easy to make. You just dump everything in the slow cooker and let it do its thing. Chicken, white beans, diced green chiles, chicken broth, salsa, cumin, and grated cheese. It smells amazing while it is cooking and tastes even better!

I think what really put this chili over the top is the grated cheese in the soup. YUM! I’ve never had a white bean chicken chili with cheese cooked into it. It won’t make it another way! We ate this for dinner and had the leftovers for lunch the next day. It was just as good reheated, if not better! Give this a try ASAP!

How to Make White Bean Chicken Chili in the Crockpot

As I said, this chili is super easy to make. Place chicken breasts, white beans, diced green chiles, salsa, chicken broth, cumin, and grated pepper jack cheese in the crockpot. Cover and cook on LOW for 6 hours. Remove the chicken breasts from the slow cooker and shred with two forks. Add the chicken back to the slow cooker and stir.

  • You can use any boneless skinless chicken in this soup. Chicken breasts, thighs, or tenderloins all work great.
  • I used pepper jack cheese. Monterey Jack cheese is also delicious in this chili.
  • Is White Bean Chicken Chili spicy? The spice level will depend on the heat level of the salsa that you pick.
  • Our favorite store-bought salsas are Mateo’s, Kylito’s, Pace Picante Sauce, and Pace Restaurant Style Salsa. I find them at Walmart.
  • Here is our recipe for Homemade Salsahttps://www.plainchicken.com/superior-grill-salsa/
  • Here is our recipe for Homeade Chicken Broth: https://www.plainchicken.com/slow-cooker-chicken-broth/
  • Can White Bean Chicken Chili be made on the stovetop? Yes! Add all of the ingredients to a Dutch oven. Bring to a boil and simmer until the chicken is done.
    • For a quick meal, you can substitute 3 cups of chopped cooked chicken for the chicken breasts.
  • Can I freeze leftover soup? Yes! You can freeze leftovers for a quick meal later. Cool the soup completely and place in plastic containers or freezer ziplock bags and freeze. When ready to serve, partially thaw and warm on the stovetop or in the microwave.
  • Is White Bean Chicken Chili gluten-free? Yes. All of the ingredients in the soup are gluten-free. Make sure to check your salsa to make sure it is gluten-free.

  1. I made this two days ago and it was really tasty! We like 'spicier' foods so I used hot diced green chilies and medium salsa. I also used 1 can pinto and 2 cans white/navy beans. More importantly, it was DONE after 3-4 hrs on low! Any longer and it would have burned. I will definitely make this again!

    1. You could use frozen chicken. It would definitely cook. I used cooked chicken because that is what the original recipe said to use.

  2. I love white bean chicken chili and the only recipe I have is much harder than this. Love how easy this one is.

  3. I have made a couple of really good soups that I got off Pinterest that called for Parmesan rind as an ingredient slowly cooked with it….new to this old school Southern girl!

    1. I saw a soup like that the other day. I need to find it and try it. I'm also interested in how the parmesan rind works in soups.

  4. Mmm, mmm, two of my favorite things, chili and the slow cooker! This will be staple in our house!
