Overnight Bacon Breakfast Casserole - our favorite way to wake up! Layers of bread, bacon, cheese and green onions baked in an egg and half-and-half custard. Seriously delicious! 1 bunchgreen onions, sliced
3cupsshredded cheddar cheese
1/2cupshredded Parmesan cheese
Lightly spray a 9x13-inch baking dish with cooking spray.
Line the bottom of the baking dish with 6 slices of bread. Crumble half of the bacon over the bread. Sprinkle half the sliced onions and half of the cheddar cheese over the bacon.
Whisk together eggs, half-and-half, salt, and pepper. Pour half over the bread-cheese layers.
Repeat the layers with remaining bread, bacon, green onions, and cheddar cheese. Pour remaining egg mixture over bread. Top with parmesan cheese.
Cover casserole and refrigerate overnight.
Preheat oven to 325ºF. Remove casserole from refrigerator and bring to room temperature.
Bake uncovered for 50 to 55 minutes, or until set.
