Homemade Pimento Cheese Buttermilk Biscuits Recipe - these are the BEST!! They are also surprisingly EASY to make with a few SIMPLE ingredients. Preheat oven to 425ºF. Line a baking sheet with parchment paper. Set aside.
In a large bowl, combine flour, sugar, baking powder and salt.
Grate butter with a box grater. Add to flour mixture. Toss gently with hands.
Whisk together eggs and buttermilk. Make a well in the middle of the flour mixture. Pour buttermilk mixture into the well.
Gently mix together the buttermilk mixture and flour mixture with your hands for about 15 to 20 seconds. Make sure not to overmix. The dough will be slightly wet. Place dough on a lightly floured surface and flatten into a rectangle.
Place pimento cheese on top of the dough and fold over on top of itself 5 or 6 times, until the dough has come together. You may need to add more flour to keep the dough from sticking.
Pat the dough to 3/4-inch thickness and cut into biscuits. Place biscuits on the prepared baking sheet.
Bake for approximately 15 minutes, until starting to turn golden brown. Brush tops of cooked biscuits with melted butter, if desired.
Notes:
I used Palmetto Cheese brand pimento cheese.Can make biscuits up to step 7 and freeze for later.To bake frozen biscuits, bake from frozen as directed above adding a few additional minutes to the cooking time.
