Pork Rind Crusted Chicken Tenders - oven-baked chicken that is SO crispy and delicious! Everyone LOVED this chicken! Chicken tenders coated in crushed pork rinds, panko bread crumbs, cajun seasoning, eggs, and mayonnaise. Dip in your favorite dipping sauce or chop up on top of a salad. These are in our monthly dinner rotation. SO good! Can freeze coated tenders for later too!!!
Preheat oven to 400º F. Line a baking sheet with non-stick foil. Set aside.
Combine pork rind crumbs, panko bread crumbs, cajun seasoning and pepper in a shallow dish.
Whisk together eggs, mayonnaise and water. Pour into a separate shallow dish.
Place flour in another shallow dish.
Dip chicken tenders into flour. Shake off excess. Dip into egg mixture and then coat in pork rind mixture. Place on prepared pan. Lightly spray chicken with cooking spray.
Bake for 20 to 25 minutes.
Notes:
Can cook chicken tenders in the air fryer at 375ºF for 8 minutes.Can substitute almond flour & increase pork rinds by 1/2 cup for bread crumbs for a low-carb/keto-friendly/gluten-free dish.
