Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.
In a large skillet cook ground beef over medium-high heat until no longer pink. Drain fat. Return meat to skillet. Add taco seasoning and water. Stir to combine. Cook for 5 minutes.
Stir in soup, Velveeta and salsa. Reduce heat to low, and cook until the cheese melts, stirring constantly.
Stir in pierogies and pour into prepared dish. Top with cheddar cheese.
Bake for 30 minutes or until heated through.
Notes:
Pierogies are basically potato ravioli. You can find them in the freezer section at the grocery store near the other frozen potatoes.
I suggest using Unsalted Cream of Chicken Soup in this dish to control the sodium.
You can assemble the casserole ahead of time and refrigerate it until ready to bake. You may need to add a few minutes to the cooking time if baking straight from the refrigerator.
You can assemble the casserole ahead of time and freeze unbaked for later. To bake the casserole after freezing, thaw completely and bake as directed below.
You can substitute ground turkey for ground beef.
There is no need to thaw the pierogies before adding them to the casserole. They will cook along with the rest of the casserole.

If you are serving this to little ones and are worried about the heat, make sure to use a mild salsa. You could also swap out the salsa for some crushed tomatoes and a little onion.
