Preheat oven to 250ºF. Line a rimmed baking sheet with foil and place a cooling rack on top.
Wrap each cracker in a piece of bacon and place it on the rack. Sprinkle with brown sugar
Bake for 2 hours or until bacon is crispy.
I suggest doubling or tripling this recipe for a crowd.
Notes:
I used Town House Crackers. Feel free to use any crackers you prefer. These would be good with club crackers.I used regular sliced bacon. If you use thick-cut bacon, it will take longer to get crispy and the crackers might burn.Add some chili powder or cayenne pepper to the brown sugar if you want spicy crackers.Bake the crackers on a cooling rack on top of a rimmed baking pan. That helps keep the bacon and crackers crispy and not absorb all the grease coming out of the bacon.Place the crackers on the cooling rack with the bacon ends facing down. This will help to keep the bacon from unraveling from the crackers.The crackers bake slow and low in the oven. YES, I baked the crackers for 2 hours.You can assemble the crackers and refrigerate them until you are ready to bake. I suggest sprinkling them with brown sugar right before you bake them. You can also bake the crackers and serve them at room temperature.I think the crackers taste best the day they are made.
