Chick Fil A Tortilla Soup– this chicken tortilla soup recipe is the BEST!! Effortless to make in the crock pot and tastes great. Chicken, taco seasoning, cream of chicken soup, chicken broth, navy beans, black beans, Rotel diced tomatoes, and corn. Simply dump everything in the crockpot and cook. Freezes well too! Serve with a salad and bread. This is on repeat at our house. YUM!
1(10-oz)can Rotel diced tomatoes & green chilies,undrained
1(11-oz)can Mexicorn, drained
1(14.5-oz)can chicken broth
Instructions:
Combine all ingredients in slow cooker. Cook on LOW 6-8 hours (can cook longer if necessary). Remove chicken from slow cooker and chop. Add chicken back to slow cooker and serve.
Freezer meal: place all ingredients in a ziplock freezer bag. When ready to cook, place contents of the bag in the slow cooker and cook on LOW for 8-10 hours. Remove chicken from slow cooker and chop. Add chicken back to slow cooker and serve.
Notes:
You can use any cut of boneless chicken you prefer - breasts, tenders, or thighs.

I suggest using Unsalted Cream of Chicken Soup in this dish to control the sodium.
You can freeze all the ingredients in a freezer ziplock bag before making it for a quick freezer meal, or you can make it and freeze the leftovers. Either way, it is a hearty and delicious meal!
If you make a freezer meal with the ingredients you don't need to thaw the bag before cooking. You can place the contents of the freezer bag in the crockpot and cook.
To reheat leftovers after freezing, thaw completely and warm up in the microwave or on the stove.
