Alfredo Chicken Chili - ready in under 30 minutes! This is the BEST White Chicken Chili! Rotisserie chicken, white beans, corn, green chilies, chicken broth, onion, garlic, cumin, sour cream, Alfredo sauce, cayenne pepper, and pepper jack cheese. Top with extra sour cream, cheese, and jalapeños. Can freeze leftovers for a quick meal later.
Combine all ingredients in a Dutch oven. Bring to a boil. Reduce heat and simmer for 20 to 25 minutes.
Notes:
I used rotisserie chicken for the cooked chicken in the chili.
You can toss the corn into the pot frozen. Make sure to cook the soup until the corn is cooked.
I like Rao's, Bertolli, and Trader Joe's Alfredo sauce.
You can make this Alfredo Chicken Chili in the slow cooker. Place all the ingredients in the crockpot and cook on LOW for 3 or 4 hours.
You can freeze leftovers for a quick meal later. To reheat, thaw and warm in the microwave or on the stove. Add a little chicken broth if the chili is too thick.
