Turn the Instant Pot on SAUTÉ. Add oil and cook pork for 2 minutes per side.
Turn off Instant Pot. Add 1/2 cup of chicken broth and scrape up any browned bits stuck to the bottom of the insert.
Add remaining chicken broth, Rotel, salsa, verde, corn, black beans, chili powder, onion, garlic, cumin, salt, and pepper.
Lock Instant Pot lid in place and seal. Cook on MANUAL or HIGH PRESSURE for 10 minutes.
Quick-release pressure. Remove pork and shred with two forks. Add pork back to the Instant Pot.
Whisk together corn starch and water. Stir into stew.
Turn the Instant Pot on SAUTÉ and cook 2 or 3 minutes until thickened.
Notes:
Use a knife to carefully trim the silver skin off the pork tenderloin before adding it to the Instant Pot.
There is no need to thaw the corn before adding it to the Instant Pot.
There is a little kick to this stew. If you are worried about the heat, use a can of MILD Rotel diced tomatoes and green chiles. You can also substitute a can of plain diced tomatoes.
You can substitute cooked pulled pork for the pork tenderloin if desired.
To make the stew on the stovetop, sauté the tenderloin in a Dutch Oven. Add the remaining ingredients and cook until the pork is tender. Shred the pork with two forks and serve.
To make the stew in the slow cooker, place all the ingredients in the crockpot and cook on LOW all day. Before serving, shred the pork tenderloin with two forks.
You can freeze the leftover stew for a quick meal later. To reheat, thaw and heat on the stove or in the microwave. You may need to add additional chicken broth to thin out the stew.
Make sure to use a gluten-free salsa verde such as Herdez for a gluten-free stew.
