1(6.2-oz)box Fast Cook Uncle Bens long grain & wild rice blend
Instructions:
In a Dutch oven, heat oil. Add onion and mushrooms and cook until soft.
Add remaining ingredients and stir.
Bring to a boil. Reduce heat to simmer and cook 10 minutes.
Notes:
I used a box of Uncle Ben's quick-cooking Long Grain & Wild Rice Blend. You are just going to dump the seasoning packet and rice directly into the soup.
Do not pre-cook the rice. It will cook it directly in the pot with the rest of the ingredients.
Can use any can of Cream of Soup you prefer - Cream of Mushroom, Cream of Celery, Cream of Chicken, or Cream of Broccoli all work great.
I suggest using Unsalted Cream of Mushroom Soup in this dish to control the sodium.
