Sausage & Cream Cheese Grits Casserole - seriously delicious!! Can make ahead of time and freezer for a quick meal later! Preheat oven to 350° F. Lightly spray a 9x13-inch pan with cooking spray. Set aside.
In a large skillet, cook pork sausage over medium heat until no longer pink. Drain fat. Stir in cream cheese and break into crumbles. Set aside.
In a large saucepan, add chicken stock; bring to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 5 to 7 minutes or until thickened, stirring occasionally. Remove from heat.
Add Velveeta cheese and butter; stir until melted. Stir in milk. Slowly stir in eggs until blended. Stir in 3/4 of sausage mixture.
Transfer grits to prepared dish. Sprinkle with shredded cheese and remaining sausage crumbles.
Bake, uncovered, 40 to 45 minutes.
Notes:
I used Jimmy Dean sausage in this recipe. You can use any brand of breakfast sausage you prefer.
This recipe uses quick-cook grits. Do NOT use instant grits!
I like to save a little of the sausage and cream cheese mixture to sprinkle on top of the casserole. This is totally optional. I just think it makes a nice presentation. I also sprinkle it with a little dried parsley for color.

Can Sausage Grits Casserole be frozen? Yes! Cover and freeze the casserole unbaked. When ready to bake, place in refrigerator and let thaw overnight. Remove from the refrigerator 30 minutes before baking. Increase baking time to 60 minutes.
This makes a lot of food. If you don't need to feed a crowd, you can half the recipe or split it between two pans. Bake one pan now and freeze one for later. Love a recipe that can do double-duty!
