In a large saucepan, melt butter over medium heat. Stir in flour until blended; gradually whisk in beer until smooth. Whisk in stock, Worcestershire sauce, mustard, salt, pepper and cayenne.
Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Reduce heat. Gradually stir in cheese until melted.
While the soup is simmering, sauté smoked sausage until it starts to brown. Drain any fat and garnish the soup with the cooked sausage or stir in into the pot.
Notes:
For the smoked sausage in this recipe, I used Conecuh smoked sausage. You can use any brand that you prefer or substitute smoked turkey sausage.
Don't like smoked sausage? Feel free to swap it for bacon or leave it out altogether for a vegetarian dish.
You can use any beer that you enjoy. I used Michelob Ultra. I suggest using a light beer so it doesn't overpower the soup.
If you don't want any alcohol in the soup, you can substitute a non-alcoholic beer.
I used cheddar cheese. Feel free to use any cheese that you prefer.
Can Beer Cheese Soup be frozen? Yes! Let the soup cool completely and transfer to plastic containers or freezer bags and freeze. To reheat, thaw and reheat on the stove or in the microwave.
