Preheat oven to 350ºF. Lightly spray a 9x13-inch baking dish with cooking spray.
In a skillet over medium-high heat, cook ham until all the moisture is gone, about 5 minutes.
Combine ham and undiluted cream of potato soup. Spread in the bottom of the prepared pan.
Whisk together eggs, milk, salt, and pepper. Pour over ham mixture. Top casserole with shredded cheese.
Bake uncovered for 50 to 55 minutes.
Notes:
Can prepare through step 4 and freeze for later. To bake after freezing, thaw completely and bake as directed above.
Can use any cheese you prefer in place of cheddar.
