1(10-oz)can Rotel diced tomatoes and green chiliesundrained
1(15-oz)can corn, drained
1(2.25-oz)packet chili seasoning
Instructions:
Place all ingredients in a 6-qt slow cooker. Cover and cook on LOW for 6 to 8 hours.
Remove chicken from slow cooker and shred with 2 forks. Return to slow cooker and stir.
Notes:
You can use any cut of chicken that you prefer - breasts, tenders, or thighs.
I used Ranch Style Beans in this chili. They are near the chili beans. If you can't find them, you can substitute chili beans or pinto beans.
I used a packet of French's Chili-O Chili Seasoning.
Can Chicken Chili be made on the stovetop? Yes! You can make this as directed with raw chicken on the stovetop. Add the ingredients to a large stockpot or Dutch oven. Bring to a boil and simmer until the chicken has cooked. Shred or chop the chicken and serve.

If you use already cooked chicken, you may need to add some chicken broth to the chili.
Can Chicken Chili be frozen? Yes! Let the chili cool completely and transfer to plastic containers or freezer bags and freeze. To reheat, thaw and heat in the microwave, on the stovetop, or in the slow cooker.
