You can substitute a jar of Rotel diced tomatoes and green chiles for the salsa. Add an extra cup of broth if you use Rotel.
I used chicken broth in this soup. Feel free to use any broth you prefer - chicken, beef, vegetable, or turkey broth are all good.
I suggest salt-free or low sodium broth if using store-bought seasoning packets.
Can Taco Soup be made in the crockpot? Yes! Brown the meat and add all the ingredients to the slow cooker. Cover and cook on LOW or HIGH until heated through.
Can Taco Soup be frozen? Yes! You can freeze the leftover soup for a quick meal later. Allow the soup to cool completely and transfer to a plastic container or freezer bag. To reheat, thaw and reheat on the stovetop, in the crockpot, or in the microwave.
